The Bocchino Distillery, founded in 1898 among the sinuous hills of Canelli, celebrates in 2018 the 120th year of excellent grappa production.
Today the only family-run company sees the fifth generation of genuine passion, with the young Marta and Miranda alongside their father Carlo Micca Bocchino, the current owner.
The founder, from whom Carlo takes his name, was the first who with courage and resourcefulness was able to give the Piedmontese grappa a nobility and a quality hitherto unknown, creating a single grape version.
Typical at that time was in fact an undifferentiated mix of little value, so he decided to found a small distillery using only the Moscato marcs of the area.
He also elaborated a particular distillation system that allowed to enhance the aromas, a method passed on from generation to generation and that still characterizes the Bocchino company, now at the top of the market.
The production process of grappa is the usual one: fermentation of the marc, distillation and aging.
The uniqueness of this product arises instead from the details of the various moments: firstly the fermentation of single-grape pomace takes place in special steel containers with controlled movements and speeds to favor the optimal development of microbiological processes.
The steam distillation, later, takes place in particular discontinuous copper stills which keep intact the slow and delicate rhythm of the steam allowing it to be enriched with precious substances.
Then you can not miss the aging in suitable barrels, necessary to achieve the perfect refinement and the characteristic amber color.
The visit is conceived as a dive into the world of grappa, suitable for beginners, but also for connoisseurs.
The route will lead you through the hundreds of barrels of different woods in the cellar, where they rest the grappa of various vintages and various single vines.
At the end of the tour visitors will be offered a tasting of 4 grappas of excellence, accompanied by some Piedmontese gastronomic delight.
