Along the road that leads from Barolo to La Morra, since 2000 the Sylla Sebaste cellar has been producing classic Piedmont wines of refined quality.

Erected right on the summit of the hill San Pietro delle Viole, which overlooks a wonderful view of vineyards and the whole of the Alba Langa, the cellar has taken on through the years, as its symbol, the effigy of the splendid 14th century chapel that stands in front of it: San Pietro delle Viole’s chapel.

The cellar is owned by the Merlo family and is led with great passion by Fabrizio Merlo with valuable collaboration from his oenologist Luca Caramellino.

The Wines

A production dedicated to traditional varieties such as Nebbiolo, Dolcetto, Barbera and Freisa.

Its seven property hectares are all located within the municipality of Barolo in prestigious Bussia and Bricco Viole.

The Sylla Sebaste wines are: the three Barolo, two of which represent the Bussia cru and Bricco delle Viole, the Nebbiolo, the Barbera d’Alba and the Langhe Rosso Syllabo.

The Barbera d’Asti comes from the Costigliole d’Asti vineyards, along with the whites: the still whites Roero Arneis and Gavi, the sweet Moscato d’Asti and the Classic Method Sparkling wine La Sylla.

Arriving in the large courtyard, guests are greeted by the Merlo family: Maurizio, Fabrizio and Marinella.

The visit begins with a walk in the vineyards.

In autumn – from mid-September to mid/late October – you can watch the harvest and the following cellar steps, such as alcoholic fermentation, pressing and racking.

The tour then continues to the production are, where the different steps of fermentation and aging of the wine are described.

The final step is the packaging room where the wine is bottled and stored.

At the end of the visit, the most awaited moment: the lunch with wine tasting guided by Mavi, who will tell stories, give info and outline the characteristics of each label.
