Along the road that leads from Barolo to La Morra, since 2000 the Sylla Sebaste cellar has been producing classic Piedmont wines of refined quality.

Erected right on the summit of the hill San Pietro delle Viole, over the years the cellar has taken as its symbol the effigy of the 14th-century chapel that stands in front of it: San Pietro delle Viole’s chapel.

From here, the view overlooks a wonderful panorama of vineyards that dominates the entire Alba Langa.

The cellar is owned by the Merlo family and is led with great passion by the owner Fabrizio with the valuable collaboration of Dr. Luca Caramellino.

The Wines

The property includes seven hectares of land.

Most of the vineyards are located in the municipality of Barolo, in the prestigious areas of Bussia and Bricco Viole.

Production is entirely dedicated to traditional varieties such as Nebbiolo, Dolcetto, Barbera and Freisa.

These grapes give life to Sylla Sebaste wines: the three Barolos, two of which represent the Bussia and Bricco delle Viole crus, the Nebbiolo, the Barbera d’Alba and the Langhe Rosso Syllabo.

From the vineyards of Costigliole d’Asti comes the Barbera d’Asti, in addition to the whites: the still Langhe Arneis and Gavi, the sweet Moscato d’Asti and the La Sylla Classic Method Sparkling Wine.

Experiences

Arriving in the large courtyard, guests are greeted by the Merlo family: Maurizio, Fabrizio and Marinella.

Upon arrival in the large courtyard, guests are welcomed by the Merlo family.

The visit begins with a walk through the vineyards adjacent to the cellar.

In autumn, from mid-September to mid/late October, it is possible to witness the harvest and the relative cellar processes: alcoholic fermentation, pressing and racking.

The tour then continues to the winemaking rooms, where the various fermentation steps are described, and to the refining and aging areas.

The final stop is the packaging area, where the wine is bottled and stored.

At the end of the visit, the most anticipated moment arrives: lunch with a wine tasting.

Guided by Mavi, who will tell you about the history, curiosities and characteristics of each label, you can taste 4 wines, paired with as many traditional Piedmontese courses.
