L’Orto Smeraldo was established in 2009, after extensive experience in the fruit and vegetables sector, by the Borio family. It is located in Vaccheria, a small hamlet in Guarene just 10 minutes from Alba, in the valley between Langhe and Roero.
The Sidré cider
The idea was launched one evening amongst friends. Seeing the high quality of the Madernassa pear, a typical Roero variety, Massimo and Emanuele decided to try producing the first and only cider made from this fruit. After the success of the initial experiments, the product was officially presented in 2014 with the name Sidré.
From the crushing and pressing of the best pears we obtain the juice for the initial fermentation at 14°, which lasts roughly 15/20 days. The bubbly process takes place during the second fermentation which is carried out at 12°, after which filtering and a period of rest in tanks take place.
At this point the Sidré cider is ready to be bottled: dry, bubbly and with low alcohol (Vol. 8%). It’s ideal for any situation; for all dishes and light aperitifs.
