No matter which type you choose, the important thing is to perform this ritual in company and not be in a hurry.

If you are a “budding griller,” let’s start from the abc with some simple steps. Trust me, well begun is half done!

Clean the grill
Before putting the grill on the fire, wash it well with water and vinegar, rubbing it with an abrasive sponge.

Prepare the embers
Take some time: the embers are ready when they are covered with a light layer of ash.

Rely on a high-quality supplier-if the main ingredient is great, you're one step closer to success!

Marinate = make no mistake
If you grill meat, marinating is a must because it prepares the fiber for cooking. The embers will then enhance all tastes.

Repair ingredients
Do not leave them in the sun; you risk ruining them. Keep them shaded and covered to protect them from insects and dust.

Warm up the grill
Make sure the grill is hot and dry before laying the ingredients on it so they don't stick.

Meat
Calf
Although Piedmontese meat is excellent for many recipes, it is not the most suitable for grilling because it is too lean.
Try the Bue grasso (the fat ox): a good compromise for choosing Italian meat. The cut? The rib eye or the belly.
Pork
Ribs, neck and sausage are a must, but have you ever tried bacon? It is fat to the point.
Chicken
Thighs are among the most popular cuts, but don't underestimate wings. Put them on the grill first because they have a rather long cooking time.
Lamb
BBQ maximizes the qualities of lamb. Try ribs, and if you really want to enjoy them, use beech or cherry wood.
Fish
Whole fishes
Fat and large fish, such as sea bream and sea bass, are easier to cook.
Alternatively, try sardines, you won't regret it!
Slices
Tuna, salmon, and shrimp are great classics.
Ask the fishmonger for cuts at least two fingers thick to prevent them from becoming too dry during cooking.
Crustaceans
Shrimp, prawns, lobsters, and langoustines are a real treat.
The carapace protects the flesh during cooking, preventing it from becoming too dry.
Vegetables and goodies
Maize
The key is to put the cobs wrapped in their leaves on the grill at the highest possible temperature. Try it to believe it!
Endive
If you like its slightly bitter taste, this is the one for you.
Cut it in half, grease it with oil and give it a pinch of salt. Cook it over medium heat.
Tofu or seitan burger
If you want to make them nice and tasty, marinate them overnight with oil, white or red wine, vinegar, carrots, celery, garlic, pepper and herbs.
Bananas and chocolate
For all BBQ purists, you can only end with the grilled dessert. Creamy, spoonable and really yummy!
