Declared a UNESCO World Heritage Site in 2014, Historic Coppo Cellars spans three centuries of history and is one of Italy’s oldest wineries.
This is a prestigious recognition that makes the Underground Cathedrals a true temple dedicated to wine, its history and the work of man.
A monumental excavation work
The Cellars, carved by hand into the limestone tufa, extend beneath the Canelli hillside for over 5,000 square meters and reach, at the lowest point, 40 meters deep.
The estate extends over 85 hectares of vineyards whose main core is in Monferrato.
The company’s origins date back to 1892 and in 2012 the company was included by Unioncamere in the national register of historic businesses with more than a century of uninterrupted activity.

A story that
begins in 1892
in Canelli
The history of the company is intertwined with the history of Piedmontese wine, tying in a special way with the development of Canelli, the capital of Italian sparkling wine.
Founder of the family and founder of the company was Piero Coppo: a careful and meticulous person who followed all stages of production in pursuit of uncompromising quality.
Following his marriage to Clelia Pennone, the company expanded with the addition of the Cellars located on Via Alba, the current company headquarters.
Right here, since the 18th century, the tunnels and tunnels that today are known as Underground Cathedrals were dug by hand in the tuff.
In the early 20th century, the winery's production ranged from sparkling wines to typical red wines of Piedmont with exports reaching lands overseas.
In 1948, a massive flood devastated the Cellars. In those years, Luigi Coppo took over from his father, implementing cutting-edge technologies for those times.
Between the 1970s and 1980s, with the advent of the four brothers Piero, Gianni, Paolo and Roberto in the company, a real turning point occurred.
The first experiments on white wines began, not forgetting the winery's vocation for red wines, especially Barbera.
1984 marked the first harvest of what would become the winery's signature wine over the years: the Barbera d'Asti Pomorosso, which would be joined the following year by Camp du Rouss.
In the 2000s, the fourth generation made its entrance: the company opened up to the modernity desired by digital communication.
Under the direction of Luigi Coppo, tours of the historic cellars and tasting routes were inaugurated for visitors from all over the world.
The Wines
Coppo production is distinguished by its history, Piedmontese pride and constant pursuit of elegance
Production focuses mainly on Barbera, Classic Method sparkling wines, Chardonnay and Moscato d’Asti which, from the 2024 vintage, is officially Canelli DOCG with its own separate denomination and therefore no longer a sub-zone.
A number of classic DOCGs are also produced such as: Gavi, Barbera d’Asti, Barolo, which Coppo, precisely because of its historic status, has the right to make wine outside the production area, Alta Langa and Nizza which represents a symbolic wine of this territory, derived from Barbera grapes grown in the best positions.
Finally, there is a selection of Grappas.
Integrated agriculture, reduction or renunciation of invasive practices, and natural vine growth are the basis of the company’s philosophy of respect for the vineyard and careful selection of suitable terroirs to enhance the characteristics of the vine.

Coppo’s Nizza vineyards are located in Agliano Terme, Castelnuovo Calcea and Nizza Monferrato.

The underground cathedrals
Ancient cellars dug by hand into the tufa rock that go deep inside the hillside
Their name comes from the characteristic barrel vaults that recall those of churches.
The surreal environment that is created is so evocative and unique that it has earned these wineries UNESCO World Heritage status.
These are true monumental works of art: long tunnels carved into the tuff, with brick vaults, corridors, and large rooms enhanced by light effects.
The temperature, which is constant throughout the year between 12 and 14 degrees, makes it possible to maintain ideal conditions for the production and aging of wines.
There are tens of thousands of bottles of sparkling wine, a wine that for long months, in the dark, in an environment ofconstant humidity is pampered until it reaches levels of excellence.
Preservation of territorial integrity and the vineyard ecosystem in all its aspects
The entire winemaking process took place in the tunnels. Presses, vats, barrels, machinery are still visible today
The limestone tuff of Canelli is incredibly stable and acts as a perfect thermal insulator
