The International White Truffle of Alba Fair is one of the main showcases of haute gastronomy and Italian excellence.

The theme chosen for the 2026 edition, Authentic Relationships, represents the natural continuation of the thematic paths developed in recent editions.

After placing the future, the intelligence of nature, and deep respect for the earth at the center, the Fair now intends to explore the value of authentic relationships: those between man and nature, between community and landscape, between tradition and innovation, between the territory and the world, and between those who safeguard the truffle heritage and those who discover it through tourist and cultural experiences.

The new image of the 2026 edition visually captures this approach: the paw of the tabui, the truffle dog, rests on the Tuber magnatum Picco held by a human hand, in a gesture of delivery, trust, and reciprocity.

Cooking show

The Cooking Shows offer an immersive experience of signature cuisine, where the chef prepares the dish live on stage, weaving together technique and inspiration. Alta Langa elegantly accompanies the entire journey, which culminates in the tasting, enriched—upon request—by the White Truffle of Alba and exclusive dedicated gifts.

It includes:

  • The dish prepared by the chef
  • A glass of Alta Langa DOCG
  • S.Bernardo water
  • A 100g panettoncino by Galup
  • The Tartufo Regale, an exclusive artisanal praline created by Michelin-starred chef Ugo Alciati, which faithfully reproduces the shape and color of the famous Alba Truffle.

Maurizio Bufi

Originally from Molfetta, in Puglia, Maurizio Bufi is a chef deeply connected to the sea, but for over a decade he has chosen to dedicate himself to Lake Garda, where today he is the Executive Chef of the restaurant Il Fagiano at the prestigious Grand Hotel Fasano & Villa Principe in Gardone Riviera.

After an experience in Switzerland, in 2008 he arrived in Gargnano for the opening of the Lefay Resort & Spa, marking the beginning of his bond with the Garda area.

In 2012 he moved to Villa Giulia, where as Executive Chef he obtained his first Michelin Star in 2017, thanks to a cuisine that combines elegance, technique, and a deep respect for raw materials.

He remained there until October 2021, when he received the call from the Grand Hotel Fasano. In his current role, Bufi masterfully leads the gastronomic offerings of the restaurant Il Fagiano, awarded a Michelin Star in 2024.

In addition to the evening gourmet offerings, he also oversees the hotel’s breakfast service, taking care of every detail to offer guests a complete, elegant, and memorable experience.

Beppe Fenoglio Hall

The Hall is dedicated to the writer from Alba Beppe Fenoglio (1922 – 1963), author of works such as Il Partigiano Johnny, Una questione privata, and Primavera di bellezza.

In the splendid monumental complex of the Magdalene Courtyard, the center of Alba’s cultural life, two large works by Gallizio face each other on the walls of the conference hall dedicated to Beppe Fenoglio.

This hall, set up during the Truffle Fair, hosts the Cooking Shows.

How to participate

The White Truffle of Alba lamellate is not included, which will follow the daily Truffle Bourse listing.

No changes can be made in case of allergies, intolerances and special dietary regimens.

Children participating in the tasting must be ticketed. If, however, they will be present in the room without taking part in the tasting, please notify info@fieradeltartufo.org within 72 hours of the event in order to arrange a seat near their parents.

L'Ente Fiera Internazionale del Tartufo Bianco d'Alba è una associazione costituita nel 2003, con lo scopo di organizzare e promuovere la Fiera Internazionale del Tartufo bianco d'Alba. E' un'organizzazione senza fini di lucro che ha tra i soci fondatori il Comune di Alba, l'Associazione Commercianti Albesi e la Giostra delle Cento Torri. Attualmente l'Ente Fiera si occupa della gestione della Fiera Internazionale del Tartufo bianco d'Alba (ottobre, novembre) e la Fiera Nazionale Vinum (aprile, maggio).
