  • 1 kilo 00 wheat flour
  • 12 eggs
  • one glass of maize flour
  • salt


Put the flour on a pastry board, giving it the shape of a volcano, and put in the hole eight whole eggs and four yolks, then add a bit of salt.

Knead carefully until the dough is strong and elastic. Give it the shape of an oval: cut it in slices and with a rolling pin make them very thin.

Let the dough dry a little, cover it with maize flour and roll it; then with a sharp knife cut each roll in thin slices, that once unrolled will be tajarin.

Cut all the dough this way. You can also use a machine.

Let the tajarin dry, then put them in boiling salted water; after some minutes take them away and add the chicken liver sauce.
