Cake with gorgonzola

Gorgonzola DOP Cheese


For the pastry

  • 250 g 00 flour
  • 150 g butter
  • 1 egg
  • 150 cc water (1,5 dl)
  • salt

For the filling

  • 6 eggs
  • 200 g cream
  • 300 g sweet gorgonzola
  • 2 leeks
  • 150 g smoked bacon
  • 30 g butter
  • salt
  • pepper
  • grated nutmeg

What to prepare

  • a little pot
  • a pan
  • a bowl
  • a 24 cm-wide baking tin


The pastry

Put the flour on a board, make a little hole in it and add the whole egg, a little salt, the butter (softened,though not liquid), add a little water and mix energically. When the pastry is soft and elastif, let it rest in a cool place for at least ten minutes.

The filling

Take the white parts of the leeks and cut them in thin slices, trhen fry them lightly in a pan with 30 g butter: Add a little water and let cook for some minutes. Put them away. Cut the bacon in pieces and fry it too. Take it away.

The cake

Roll the pastry, and cover with it the bottom and sides of the tin, where you already have rubbed butter and flour. Make some holes in the pastry with a fork. Cut the gorgonzola in thin slices and put it on the pastry.

In a bowl, beat the eggs, then add cream, salt, pepper, nutmeg, leeks and bacon. Mix and put on the gorgonzola that covetrs the pastry. Put it in the hot oven (150°C). Serve hot after 50 minutes.
