For generations no the history of the Rabino family has been intertwined with wine and work in the vineyard.
The winery is family-run and all work is managed in the first person; the guest on arrival will always find a member of the family to welcome him.
The activities and tasks to be discovered during the visit are numerous and diversified: winemaking, breeding, floriculture.
Luigi, Daniela, Paolo, Silvia, Adelaide: each carries out their own task, but always with mutual help in every area of production.

Luigi Rabino is the founder of Coalvi, the Piedmontese Breed Protection Consortium, which since 1984 has guaranteed the origin and quality of beef.

A story that
begins in 1862
in Canale
The origins of the Rabino family date back to the Middle Ages.
Settlement in the Roero, on the same lands still owned by the family today, followed the removal from the Alta Langa because of frequent barbarian raids.
Wine production began in the mid-19th century with a small production reserved for family and friends-a passion that still does not represent income.
It would later be Luigi Rabino, grandfather of the current owner and subsequent descendants, who would market the wines.
Even during the period before the World Wars, many of the varieties still produced today are bottled.
Sharing, overcoming difficult historical moments of the 1900s and increasing demand have today made the Company a reality in the Roero with diversified and almost fully self-sustainable production.
The Wines
Rabino Winery produces red and white wines representative of the area
Cavajè Sparkling Wine is one of the Company’s most representative wines.
Produced in the municipality of Canale from the Cavajè Vineyard, it is a unique Arneis-based Brut sparkling wine.
This is a wine with distinct aromaticity suitable for aperitifs and sparkling wine cocktails. Excellent at the end of a meal.
The typical wines of the Roero
Roero Arneis Gioca, with a straw-yellow color tending toward green and fruity flavors, differs from other whites in its longevity.
It goes well with fish dishes, appetizers and aperitifs, but is also an ideal companion for vegetable dishes, white meats and cheeses.
Roero DOCG is the king of wines comes from the best southwest-facing hills.
Ruby in color with garnet hues, it goes well with important red meats, such as shank and braised beef, and with all game.

Azienda Agricola Rabino Giuseppe Luigi – Spumante Cavajè
The wines, fruit of the historic land of the Rabinos in the Roero
Guests are always welcomed and accompanied by a member of the Rabino family
Products
The apricots are harvested to make homemade jam prepared according to an ancient recipe
Production is completed with Tonda and Gentile delle Langhe quality hazelnuts from the 10 hectares of the estate’s hazelnut orchard and apricots.
These products are partly sold and partly processed.
Hazelnuts, shelled, roasted and placed under vacuum, make an excellent, typically Piedmontese snack.
Apricots not sold at markets are processed and made into jam by a small workshop in Chieri.
Apricot jam
Fragrant and intensely flavored, the jam creates an excellent flavor contrast.
Try it paired with typical Piedmontese toma cheese.
Both products are served during the tasting and can be purchased at the Winery.
Breeding and sustainability

Production is extremely limited, with about 1200 cans per year
The hazelnuts are obtained from the 100 hectares of hazelnut grove through manual work in total respect of the environment
The Fassona Piemontese is the great ally of corporate sustainability
Visits & Tastings
Guests arriving at the Winery are always greeted by a family member, usually Daniela or Adelaide
The tour begins at the viewpoint with a detailed explanation of the surrounding ecosystem consisting of forest, vineyards, and orchards.
Crossing the courtyard, one reaches the barn divided into different rooms housing 220 head of cattle.
The next step concerns the winemaking and aging rooms, where Roero DOCG and Barbera d’Alba DOC rest in wooden barrels.
Before the tasting takes place we linger in the small crutin, a room carved out of the tuff. Here old labels are stored at a constant temperature all year round.

Tasting of 4 glasses of wine of your choice served together with a board of cold cuts and cheeses from small local producers, hazelnuts and home-made jams.
Gourmet tasting (min. 4 people) → 20.00 € / person
A sampling of 4 glasses of wine paired with sushi made with Piedmontese Fassona beef (locally raised beef processed by Turin-based Butcher Testa, in business since 1916).
For each person, 12 uramaki are served, the base of which will be knife-beating in four different variations:
- Gorgonzola, speck and walnuts
- Arnad lard, Roccaverano and hazelnuts
- mortadella and pistachio mousse
- Saffron rice and wasabi mayonnaise

Barbera d'Alba DOC La Ciapa
A wine born in the second half of 2020
Azienda Rabino’s surprise for 2020 is all in the Barbera d’Alba called La Ciapa.
The process involves aging for 18-20 months in large French oak barrels, followed by a period in the bottle in order to reach the right maturity.
This wine is characterized by an intense ruby red color, tending to garnet with aging.
Offers aromas of coffee and spicy notes such as pink pepper and red juniper, to the more fruity ones of cherry and plum.
Well paired with meat sauces and important main courses.
