Cascina Bosco Maggiore, known in these valleys as “Bus Mau” (dialect translation), is now a solid reality well rooted in the territory.

Its story begins in 1918, when Giovanni Franco, great-grandfather of the current owners, falls in love with the rustic farmhouse hidden in the hills just outside Alba, and decides to make it his life and work.

He then plants the first hectares of hazelnut grove, exploiting the predisposition of the soil, the altitude and the climate of the place to produce the famous Tonda Gentile e Trilobata (Piedmont Hazelnut IGP) that conquers over the years all the generations to follow.

Today the company is run by the great-grandchildren Katia and Marco, who in 2016 took the reins of the company and choose to internally transform the production hazelnuts, thus setting up a shelling plant and a laboratory for processing semi-finished products and gianduja creams.

Products

In the laboratory the most varied products come to life, united by the inimitable taste and the extraordinary quality of the ingredients.

The goal is to ensure a product that represents the passion and values ​​that have united the family for generations, offering a set of flavors typical of these lands.

Spreadable creams

The company produces 4 types of cream, different for the percentage of hazelnut contained, but also for the remaining ingredients.

The Gianduja cream, with over 50% of hazelnuts, cocoa, milk and sugar, is a completely natural product without preservatives or thickeners; Dark Gianduja has the same characteristics, but is produced without milk to obtain an even stronger aroma.

The Gianduja Nero Intenso is instead a dark cream, produced with an alkalized cocoa, with a milder flavor and a darker color.

Last, but not for goodness, the White cream, with a percentage of 52% of hazelnuts together with milk and sugar: its taste is light and delicate, perfect for all palates.

To complete the Cascina Bosco Maggiore product line we find vacuum-packed bags of toasted hazelnuts, as well as Flour, chopped hazelnut and Piedmont Hazelnut Paste I.G.P. of the Langhe.

Did you know...?

Hazelnuts, commonly listed among dried fruit, are rich in oleic acid (an important defense against vascular diseases) and vitamin E, a natural antioxidant that slows down the aging of tissues.

The Supply Chain

Each phase of the transformation is carried out personally, following strict control parameters.

The production is fully certified as “Piedmont IGP hazelnut from the Langhe”, recognized as the best in the world for its excellent taste and aroma.

Furthermore, since 2020 the company is registered in the register of Italian excellence.

Harvesting and drying

The hazelnut harvest takes place at the end of summer, when the fruit has reached full maturity and falls to the ground naturally.

This moment is important because the hazelnuts must be harvested before the dampness of the soil ruins their consistency: it is therefore a real challenge against time.

The hazelnuts are then dried in the sunlight, removing them at night so that they do not take moisture from the air.

The processing

The first stages of processing consist of shelling, followed by calibration (division based on weight) and sorting, carried out strictly by hand.

The hazelnuts are then toasted before being transformed into the various products of the range.

The visit

The company can accommodate a maximum of 40 people for a visit to the laboratories and hazelnut groves, during which the various stages of production will be explained. The duration of the tour is about an hour: contact them to agree on a price!
