Corn cookies


  • 600 g “meliga” (corn) flour
  • 150 g butter
  • 150 g sugar
  • 6 tegg yolks
  • grated lemon peel
  • salt
  • olive oil


Melt the butter on a very slow fire; add the flour, egg, lemon peel, a little salt and if necessary some spoons of olive oil, to have a creamy mixture.

Put the mixture on a cake tin covered with butter and dusted with flour; shape it as little sticks.

Put in the hot oven (180° C) and cook for 20-30 minutes.

Serve cold.
