Within the suggestive Roddi Castle, one of the most fascinating Italian cooking schools offers theoretical and practical courses dedicated to the gastronomic tradition of Langhe, Monferrato and Roero, as well as the great iconic dishes created by important chefs.

The experience

All in a truly unique location.

The school has 7 modern stainless steel workstations, fully equipped with all the necessary tools.

Participants are actively involved in the preparation of the dishes and will have the opportunity to taste what they have made, accompanied by a glass of local wine.

The workstations are 7 and can be used individually or in pairs.

The shaving of White Truffle of Alba is not included, but can be added to the dish according to the daily Truffle Market listing.

The course has limited enrollment and allows a maximum of 14 people.

The workstations are complete with all the equipment necessary for the theoretical and practical conduct of the lessons.

At times, the destiny of people is written and trying to escape it becomes impossible.

So it was for Walter Ferretto, chef of Cascinalenuovo in Isola d’Asti, for 32 years, uninterruptedly, a Michelin star, born into a well-known family of restaurateurs who, as a young accountant, imagined a life in the world of finance.

But by peeking into the kitchen, helping out in his free time, stealing the wisdom of tradition from his mother and grandmother, he soon discovered what his true passion was and changed the course of events.

With his brother Roberto, dining room manager and sommelier, in 1985 he decided to transform the line of that Cascinale family restaurant to begin the adventure with Cascinalenuovo, strengthening the fundamentals of Piedmontese cuisine and adapting the preparations to a taste that was evolving, thus becoming a point of reference for Asti catering.

For some years now, with a sodality proof of generation and vision, the collaboration with a young talent Gabriele Bianco was born, with a great experience around the world despite his young age and a great passion for experimentation and contaminations.

This true partnership allows today to offer the customers of Cascinalenuovo two gustatory and sensory paths: one linked to tradition and one open to innovation.

The course, lasting approximately 2 hours, takes place in a professional environment with modern, fully equipped stainless steel workstations.

Upon arrival, each participant finds their workstation already set up with all the necessary tools. The experience continues with the guided preparation of the dish together with the chef, supported by a simultaneous translation service to ensure the involvement of all guests.

At the end of the lesson, participants sit down at the table to taste the dish they have prepared, accompanied by a carefully paired local wine.

L'Ente Fiera Internazionale del Tartufo Bianco d'Alba è una associazione costituita nel 2003, con lo scopo di organizzare e promuovere la Fiera Internazionale del Tartufo bianco d'Alba. E' un'organizzazione senza fini di lucro che ha tra i soci fondatori il Comune di Alba, l'Associazione Commercianti Albesi e la Giostra delle Cento Torri. Attualmente l'Ente Fiera si occupa della gestione della Fiera Internazionale del Tartufo bianco d'Alba (ottobre, novembre) e la Fiera Nazionale Vinum (aprile, maggio).
