In Bossolaschetto, a hamlet of Bossolasco, you will find Da Fabiana, a unique family-run establishment that combines hospitality and cheese specialties with a short supply chain.

The Sida family (dad Giorgio, mom Livia, and daughters Fabiana and Katia) welcomes guests in a warm trattoria in the greenery of Alta Langa, where Sardinian cuisine is the true protagonist, a result of the deep connection with island roots.

For years, Da Fabiana has been a reference point for both locals and tourists who want to discover flavors and dishes beyond the Piedmontese tradition.

Next to the restaurant is the farm dairy: here, from the raw milk of Sardinian sheep and goats, artisanal cheeses are born, the result of dedication and patience.

The Cheese Experience is a guided and engaging journey to discover up close the secrets and passion of the cheesemaker’s craft.

Moreover, the renovation of a typical Langa house in stone and brick has allowed for the creation of five rooms and a suite equipped with every comfort, with a heated pool and sunbathing area, to transform the stay into an experience of authentic relaxation among the hills of Alta Langa.

Family-run farm dairy with trattoria and rooms

It all started in 1999 when the Sida family opened Da Fabiana, a small country trattoria.

In this land, the Alta Langa, which at the time was beginning to open up to Italian and international tourism, but where culinary offerings were tied to local cuisine, the Sida family's challenge was to offer the specialties of Sardinian cuisine.

At the same time, the passion for breeding and milk processing led to the expansion of the adjacent farm.

Today, the facility hosts a small and modern dairy where the animals are fed and cared for in the healthiest way possible to ensure uncompromised milk quality.

The barn houses one hundred Sardinian sheep, twenty goats, numerous lambs and kids, three donkeys, and two ponies.

The evolution of tourist demand in Alta Langa and the growth of the foreign audience have driven the renovation of a typical Langa house intended for hospitality.

While in the past, the demand for stays was mainly linked to the classic weekend "day trip," today there is a more constant presence throughout the year, no longer concentrated only in autumn, the region's peak season.

This change was accompanied by the construction of the pool, and wellness services have increased. An example? The private whirlpool tub in the room, which has now become an essential requirement to ensure guests have an unforgettable experience.

The Rooms

For those who truly want to disconnect from routine, the facility offers adults-only accommodation: check-in is allowed only for guests over 18 years old, to ensure an atmosphere of total tranquility and relaxation.

The rooms, spread over three floors, welcome guests in an intimate setting, where the warmth of wood, the exposed stone, and the ancient bricks tell the authentic character of Alta Langa.

Five rooms of 25 m² and a suite of 45 m² offer simple but well-maintained spaces, equipped with every comfort: independent heating, flat-screen TV with national and international channels, desk, minibar, selection of teas and herbal teas, free Wi-Fi, memory foam toppers and pillows for impeccable rest.

Each room has a private bathroom with shower, bidet, hairdryer, courtesy set, towels, bathrobe, slippers, and pool towel.

The cool climate of Alta Langa, thanks to the altitude of the hills, makes air conditioning unnecessary: even in the hottest months, the days remain mild and pleasant.

The panoramic terraces complete the experience: from here, the view opens onto the hills that change with the seasons, offering new shades to observe in silence every day.

The pool is open from May to September

Outside, the heated pool accommodates up to 16 people. It is a small oasis of peace surrounded by greenery with a sunbathing area of 200 m².

For those not staying at the facility, the day-use formula is available, which includes the use of the pool and room from 9:00 AM to 8:00 PM at the price of 25.00 € per person.

Breakfasts

For breakfast, always genuine, fresh, and quality ingredients are chosen, favoring artisan productions, so that guests can enjoy a unique taste experience from the first morning and start the day with energy and good humor.

The rich buffet offers a selection of sweet and savory delights, hot and cold: freshly baked croissants, jams and hazelnut creams, fresh and dried fruit, cold cuts, eggs, fruit juices, yogurt, cereals, and the indispensable cheeses from the dairy.

The pastures of Alta Langa meet the Sardinian sheep

The goats and Sardinian sheep, fed with hay from the surrounding meadows, produce milk of excellent quality, processed immediately according to the ancient raw milk technique.

During lactation, they receive a supplement of cereals to support the growth of the lambs. Thus, nutrients naturally pass from grass to milk, ensuring a rich and genuine raw material.

This is how fresh and aged cheeses are born, carefully aged in natural stone caves.

Castelsardo sheep cheese

Thin yellow-brown crust and crumbly paste that turns from white to golden yellow with green veins. The taste, sweet and delicate at first, becomes increasingly intense, with slight bitter and spicy notes.

Cardolino goat cheese

Straw-colored crust, compact paste, and buttery texture. Floral and vegetal notes blend into an enveloping flavor that is slightly savory and evolves with aging.

Pecorino

Thick and irregular crust, crumbly paste, and aromas of herbs, hay, and hazelnut. The taste is intense and persistent, with a balance between sweet, salty, and a slight spiciness.

Bossoleggio goat cheese

Ivory-colored semi-hard paste and straw-yellow crust. Aromatic herb and pasture scents combine with a balanced taste. With aging (2–6 months), notes of butter and a hint of spiciness emerge.

Tomino goat cheese

Soft and compact paste, white and fragrant with goat milk. The taste is fresh and slightly tangy, with a clean and refreshing finish.

Strabun sheep cheese

With yogurt inoculation, it has a sweet and harmonious flavor. Creamy paste and melting, ivory white in color.

Robiola goat cheese

Soft crust and white paste, slightly moist. On the palate, it is delicate and floral, with a pleasant creaminess and a touch of tanginess.

Robiola sheep cheese

Spreadable paste, thin crust, and fresh aroma with notes of milk and flowers. The taste is sweet, fresh, and light, perfect for those who love delicate flavors.

Bossolasco: a pearl of Alta Langa

Nestled among the hills of Alta Langa at about 800 meters altitude, Bossolasco is known as the "Pearl of the Langhe" or the "Village of Roses" and is a village that captivates anyone who arrives. Walking through the historic center along Via Umberto I, you encounter stone houses adorned with climbing roses and picturesque views that offer a romantic and timeless atmosphere.
Bossolasco is also an ideal starting point for excursions and trekking among hills and woods that offer spectacular views in every season. Throughout the year, the village also hosts cultural events and local festivals, such as the traditional Rose Festival, allowing visitors to experience the traditions and hospitality of the locals up close.

Experiences

A full immersion in grazing, production, and tasting

The Cheese Experience is a guided tour designed exclusively for an adult audience (18+), to discover up close — in an illustrative and engaging way — the world of artisan cheese production.

The experience lasts about three hours, but can be customized according to needs: whether it’s a couple, a group of friends, or a corporate team, the program always adapts.

The tour is led by mamma Livia, who guides guests through the barn and daily work: a cycle that begins with slow grazing in the meadows, continues with milking, and ends with milk processing, done with respect for ethical and sustainable methods.

In the dairy, you can see how — enclosed in molds — fresh and aged cheeses take shape, produced exclusively with milk from the farm’s animals. Here you understand how agricultural work knows no breaks, but is a daily ritual that renews itself all year round.

Tasting: a full-fledged lunch

The tasting starts at 11:00 AM and turns into a real rural lunch.

It begins with a welcome appetizer of flavored yogurt and salted butter. Next, a selection of eight cheeses: four fresh and four aged, accompanied by crispy bread, croutons, artisan jams, and honey.

To conclude, a dessert with ice cream and sheep yogurt, for a fresh and refined note.

The experience can be enriched with a selection of Sardinian or Piedmontese wines.

The Cheese Experience is available Monday to Saturday, even in case of bad weather. Upon request, an English-speaking interpreter is available.
