Without alcohol but with taste The Lang%zero project: between conviviality and new traffic regulations

Fabio Oberto, owner of the farm of the same name and the La Collina di Dioniso brand, is involved in the production and marketing of wines from the Langhe and Roero.

Today, a few weeks before the new traffic regulations come into effect, Fabio introduces us to his project dedicated to dealcoholic wine, Langh&Zero.

Fabio, how did the Langh&Zero project come about?

After 20 years of experience in the family winery in La Morra, I decided to start my own farm to explore new ideas and production methods.

Langh%Zero was born from my desire to offer an innovative and alternative product to traditional wine for those who, by necessity or choice, choose not to consume alcohol without giving up the pleasure of a glass.

Many people liken dealcoholic wine to grape juice. Can you explain how they differ?

Grape juice is simply the product obtained by pressing grapes, without fermentation and therefore without alcohol.

Dealcolated wine, on the other hand, starts from the traditional process: the juice ferments, develops alcohol and gains aromatic complexity.

Next, the alcohol is removed using advanced techniques. We use reverse osmosis so that the aromatic and phenolic compounds are retained, ensuring a drink that retains many of the characteristics of traditional wine.

Let’s talk about benefits

Dealcoholic wine is ideal for those who want to reduce alcohol consumption, whether for health reasons, religious reasons or to avoid the risk of being fined while driving.

It contains phenolic compounds, known for their antioxidant benefits, without the negative effects of alcohol. It is a perfect choice for formal situations, during pregnancy or for those who play sports; thus, it is a way to enjoy a convivial moment without worries.

The Ministry of Transportation has reiterated that the recent crackdown on traffic laws does not change the allowable limits for alcohol consumption. However, there is a wave of concern from business owners, restaurateurs and wine producers. What is your opinion?

As is often the case, misinformation breeds confusion. The new regulations toughen the penalties for driving with an index above 0.50 grams per liter of blood alcohol and are decidedly severe for both repeat offenders and those caught using smartphones or under the influence of drugs.

The topic of alcohol consumption attracts a lot of attention among consumers: it is paradoxical to observe people who drive while using their cell phones and at the same time choose to drink water instead of the classic glass of wine at the dinner table.

Choosing nonalcoholic wine at dinners or social events allows people to enjoy the pleasure of a glass without compromise and can help raise awareness by creating a safer environment on the roads.

A good choice therefore, even for new drivers

Certainly: the blood alcohol level for newly licensed drivers will have to be zero for the first 3 years, although they will be able to drive more powerful cars than before, and this is seen by many as nonsense.

Let’s go back to your Lang%zero: tell us about how it was born and the characteristics?

We start with Chardonnay grapes grown in our vineyards in Vezza d’Alba. After a traditional fermentation, we use reverse osmosis to remove the alcohol. Next, we reintroduce natural sugars from the must to restore body and fullness to the final product. Finally, we pasteurize to ensure stability and integrity of the dealcolated wine.

The product is bottled in 0.75-liter Bordeaux bottles with a cork, just like a traditional wine. After opening, it will keep in the refrigerator for about a week. The taste is pleasantly enveloping, with aromatic notes reminiscent of the original wine.

Of course, the absence of alcohol may make it less intense, but the aromatic balance and palate sensation remain satisfactory.

Why did a traditional manufacturer like you decide to focus on such an innovative product?

I believe that innovation and tradition can coexist. Wine is a symbol of conviviality, and Langh&Zero expands the options for those who wish to enjoy an unlimited toast.

It is a challenge that enriches my vision as a producer and allows me to respond to the needs of an increasingly attentive and diverse audience.
