Friceu (Fritters)


  • 300 g 00 flour
  • 4 eggs
  • a glass of milk
  • a spoon of natural leaven
  • peanut seed oil for frying
  • salt


Beet the egg yolks in a bowl, add milk, then add slowly the flour and the leaven, and the salt.

Mix with care until it becomes a smooth ad soft cream. If necessary, add some more milk.

Leave it resting for a while, then add the beaten albumen: your will obtain or very hot oil.

When the fritters are golden on both sides, take them out with a skimmer and put them on a sheet of blotting-paper to eliminate the oil in excess.

The four or five fritters at a time.

Serve the hot fricieu at the beginning of the meal.
