Summer salad with taleggio

  • 1 clump of lettuce
  • 1 “cuor di bue” tomato
  • 1 handful of yellow French beans
  • 2 apricots
  • 2 slices of fresh ananas
  • 1 green apple
  • 150 g fresh Taleggio
  • 4 slices of Parma ham
  • extra virgin olive oil
  • mustard
  • lemon
  • pepper
  • salt
  • tabasco sauce


Wash the lettuce and dry it carefully.

Put it in a salad bowl. Take a “cuore di bue” tomato (if big; two if little). Peel it and cut it in pieces.

Separately boil the French beans for some minutes, let them cool down and cut themin pieces.

Cut the ham in strips one finger large and some centimeters long.

Take the crust away from a piece of fresh Taleggio and cut it in pieces.

Add all the ingredients to the lettuce in the bowl and mix.

Prepare the dressing this way: in a little bowl mix some oil, a bit of mustard, salt, pepper and lemon.

Dress the salad. Add a little Tabasco sauce and check the salt.

Cut the apricots and the ananas in little pieces; cut the apple in slices.

Put the dressed salad inthe plates; decorate each portion with two slices of apple and some pieces of apricots and ananas. Serve.
