The Bollito family, originally from Cisterna d’Asti, arrived in Moncalvo in the early 1900s and began cultivating vines and producing wine.
Three generations have followed since then, and over the years the family has expanded its production, adding goat and calf rearing to viticulture.
Today Cascina Valeggia is adiversified company that expresses the best of the area from an agribusiness perspective.
In fact, wines, goat cheeses, cold cuts and high-quality Piedmontese Fassona meat are produced.
All of the farmstead’s produce is available in the store, and it is possible to stay in the farmhouse rooms.
The Wines
The grapes are vinified in the estate wineries, with processes that respect traditions and nature.
The farm can rely on 25 hectares of land and uses modern technology to achieve the best product quality.
In the old cellars, built with exposed brick, the most prestigious wines are aged in Oak barrels.
Among the different types produced, the area’s most characteristic wines stand out: Barbera d’Asti Superiore DOCG, Grignolino d’Asti DOC and Freisa d’Asti DOC.
Of particular importance is the cultivation of one of the oldest grape varieties in Monferrato, rediscovered in recent years: the Slarina.
The bulk
The winery also offers the purchase of vintage bulk wine: floral, fruity, round and drinkable, a wine with a genuine taste, just like the wine of yesteryear.
Wines are sold in bag-in-boxes of 3, 5, 10 and 20 liters or in bottle (1 liter), flagons (2 liters) and checkers (5 liters).

Products
Cured meats, cheeses, meats, vegetables and grapes are produced on the farm while respecting the environment
Cheeses
The Bollito family produces raw milk cheeses from the Camosciata goat of the Alps.
The farm boasts a goat herd of about 120 animals from which it draws milk to produce fresh and aged cheeses.
Crescenza, robiola, ricotta, toma and blue, to name a few, stand out for their authenticity and traditional recipes.
Each batch has its own history and organoleptic characteristics that vary depending on the season, the time of lactation, and the grasses in the meadows from which the hay and alfalfa are made.
Cold cuts and meat
Raw and cooked Moncalvo salami, lonzardo, coppa, and fresh sausage are produced in the company’s factory, which is complemented by the sale of Piedmontese Fassona meat.
The calves are raised as naturally as possible and fed on the farm’s certified non-GMO hay and grain.

Visits & Tastings
Visits to the winery's cellars are available by reservation.
Season permitting, you can also walk among the vineyards, watch work in the winery, see the goat and cattle farms, and participate in the dairy processing stages.
At the end of the visit there will be a tasting of the wines and cheeses produced, which will be held in the Cascina Valeggia store, a spacious venue with 35 seats.
At the end of the visit you can buy the wines or, if you prefer, have them shipped directly to your home.
