Gourmet tasting with the Rabino family

12 uramaki of Piedmontese Fassona beef + 4 glasses of wine

The gourmet tasting, bookable for at least 4 people with advance payment, takes place at the historic Rabino winery, a sustainable business with diversified wine and agricultural production.

This unique experience includes tasting 4 glasses of wine paired with Piedmontese Fassona beef sushi (locally raised beef processed by Macelleria Testa in Turin, active since 1916).

For each person, 12 uramaki are served, the base of which will be knife-beating in four different variations:

  • Gorgonzola, speck and walnuts
  • Arnad lard, Roccaverano and hazelnuts
  • mortadella and pistachio mousse
  • Saffron rice and wasabi mayonnaise

Information about the experience

To ensure an exclusive and well-organized experience, the gourmet tasting is bookable for a minimum of 4 people and requires advance payment.

Reservations must be made at least one week in advance. Available times for the tasting are: 11:00 AM2:30 PM4:30 PM.

When filling out the reservation form, please indicate the presence of children to allow for proper accommodation.

The Rabino family, the wines and other products

The Rabino family estate has an over-a-century-old history behind it, which you can discover during the visit to the winery in Canale.

Specialized in production that is respectful of the environment and sustainable, Rabino is an old-style winery, still with mixed production.

Although viticulture represents the core of production, the activities are diversified: breeding of purebred calves of Piedmontese cattle, cultivation of peaches, apricots and the famous Tonda e Gentile Hazelnut of Langhe.

The visit to the winery

If the weather is favorable, the visit begins with a walk through the rows surrounding the farmhouse, an opportunity to discover the peculiarities of the terrain and the meticulous work of the winemaker.

Next, the producer will guide you inside the winemaking facilities and into the evocative crutin, the ancient natural cellar carved into the tuff.

The tour culminates with the highly anticipated tasting, during which the wines will be presented and accompanied by a sampling of typical products.

Don’t miss the Spumante Brut Cavajè, a unique excellence made from Arneis grapes.

For red wine lovers, two exceptional labels, aged in wooden barrels: Roero DOCG and Barbera d’Alba DOC.

    A central role in business sustainability is represented by the breeding of Piedmontese cattle, which currently counts about 220 head of livestock. Animal welfare is considered a fundamental element to ensure a healthy and self-sufficient ecosystem, as well as to obtain high-quality meat, a principle supported since the foundation of Coalvi, the Consortium for the Protection of the Piedmontese Breed.
