of Santo Stefano Roero<\/p><\/div>\n<h2>The landscape of the &#8220;Rocche&#8221;&#8230;<\/h2>\n<p>From Pocapaglia to Mont\u00e0, until you get to Cisterna d&#8217;Asti, the landscape of the<strong> rocche of Roero<\/strong> extends, a long rift of the earth characterized by <strong>steep cliffs and pinnacles of sand in slow erosion<\/strong>, which take on a singular beauty.<\/p>\n<p>This spectacular interweaving of valleys is covered in the valley floor by a <strong>wild and colorful vegetation<\/strong>, which grows wild and lush.<\/p>\n<p>However, this vegetation is very different from the one in which truffles are usually sought, as it originated from a <strong>poor soil<\/strong>, a mix of sand and tuff: an insufficient structure for trees like oaks.<\/p>\n<p>These factors might seem, to a distracted eye, to misrepresent the area to the growth of hypogean mushrooms: they create instead the <strong>optimal conditions<\/strong> for the development of<strong> a white truffle at its best<\/strong>.<\/p>\n<p>In fact,<strong> sand and tuff<\/strong> form the perfect symbiosis: the first, in case of rainy years, <strong>ensures good drainage<\/strong>, while the second protects from drought when the rain is scarce, <strong>retaining moisture<\/strong> and giving the truffles of the rocche its quality mark, the <strong>characteristic yellow color<\/strong>.<\/p>\n<div class=\"content__image aligncenter wp-image-187383 size-landscape-lg\"><div class=\"ratio\"><div class=\"ratio__content\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-187383 size-landscape-lg\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2018\/10\/Tartufo-bianco-3.-1400x875.jpg\" alt=\"\" width=\"1400\" height=\"875\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2018\/10\/Tartufo-bianco-3.-1400x875.jpg 1400w, https:\/\/langhe.net\/wp-content\/uploads\/2018\/10\/Tartufo-bianco-3.-900x563.jpg 900w, https:\/\/langhe.net\/wp-content\/uploads\/2018\/10\/Tartufo-bianco-3.-550x344.jpg 550w\" sizes=\"auto, (max-width: 1400px) 100vw, 1400px\" \/><\/div><\/div><\/div><\/p>\n<h2>&#8230;and its truffle<\/h2>\n<p>Another similarity between truffle and wine is the <strong>contact<\/strong>: in both cases, when you approach a new product, the path is made of<strong> sight<\/strong>, <strong>smell<\/strong> and <strong>taste<\/strong>.<\/p>\n<p>You start by observing the <strong>color<\/strong>, the appearance, the softness and the nuances.<\/p>\n<p>You are then struck by the <strong>scent<\/strong>, trying to recognize the influences and classify it in a category.<\/p>\n<p>Finally, but only after an external study, <strong>you taste it<\/strong>, completing the evaluation.<\/p>\n<p>The Rocche truffle reaches <strong>excellence in every step above<\/strong>: the aspect is the first criterion to give it an added value, with the particular color already described and the<strong> spherical shape<\/strong>.<\/p>\n<p>The latter is due to the composition of the soil, which thanks to its <strong>softness<\/strong> makes it smooth and clear.<\/p>\n<p>But the appearance is not enough to make a truffle more precious: the <strong>scent<\/strong> of the product of these lands is <strong>intense and delicate at the same time<\/strong>, a sweet persistence far from being exaggerated.<\/p>\n<p>The <strong>taste<\/strong> then takes away any doubt from even the most experienced mouth, guaranteeing it its fame, and placing it among the<strong> most sought after<\/strong> and expensive truffles of the entire world market.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The truffle is a precious commodity, constantly discussed, but always surrounded by an aura of mystery.
