and &#8220;mustn&#8217;t&#8221; for a correct use"},"content":{"rendered":"<p>Truffles are the <strong>kings of local cuisine<\/strong>, whose character is that of an <strong>autumn cuisine<\/strong>.<\/p>\n<p>It has <strong>strong scents<\/strong> and intense tastes, that are easily matched with great wines.<\/p>\n<p>And, over all, truffles: <strong>a season&#8217;s smell<\/strong>.<\/p>\n<p>A kind of cooking that deeply involves all the senses, also thanks to the <strong>much talked about aphrodisiac vortues<\/strong> of this mushroom.<\/p>\n<p>Truffles, those &#8220;cite pugn\u00e0 &#8216;d bej seugn&#8221; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<h2>How to identify a good truffle<\/h2>\n<p>As we&#8217;ve explained in the article &#8220;<a href=\"https:\/\/langhe.net\/986\/the-truffles-and-the-rocche\/?lang=en\">Truffle and terroir: the Rocche of Roero<\/a>&#8220;, the first approach is very similar with that of wine: sight, smell, taste.<\/p>\n<p>An important difference between the two products, however, is in the <strong>touch<\/strong>, inevitable during the purchase of the mushroom.<\/p>\n<p><strong>A good truffle must be hard<\/strong>.<\/p>\n<blockquote class=\"big\"><p>Compactness is the first sign of a fresh and high quality product.<\/p><\/blockquote>\n<p><strong>The eye wants its part<\/strong>, and from the look it is possible to recognize its characteristics of development, although the appearance does not influence its taste in any way.<\/p>\n<p>A <strong>smooth and round peridium<\/strong> is easily connected to a<strong> sandy soil<\/strong>, where growth has not been limited, while instead the characteristic <strong>wart<\/strong>s take different shapes according to the <strong>obstacles<\/strong> encountered in the development (roots, boulders, or compact soils).<\/p>\n<p>The scent of a good truffle must be <strong>sweet<\/strong>, without interference from other smells that can reduce its market value.<\/p>\n<p>Bring it to the nose and perceive the classic earthy aroma, umami.<\/p>\n<div class=\"caption__container content__image aligncenter size-landscape-lg\"><div class=\"ratio\"><div class=\"ratio__content\"><img loading=\"lazy\" decoding=\"async\" class=\"size-landscape-lg wp-image-186516\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2019\/09\/tajarin_tartufo-1400x875.jpg\" alt=\"Tajarin al tartufo\" width=\"1400\" height=\"875\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2019\/09\/tajarin_tartufo-1400x875.jpg 1400w, https:\/\/langhe.net\/wp-content\/uploads\/2019\/09\/tajarin_tartufo-900x563.jpg 900w, https:\/\/langhe.net\/wp-content\/uploads\/2019\/09\/tajarin_tartufo-550x344.jpg 550w\" sizes=\"auto, (max-width: 1400px) 100vw, 1400px\" \/><\/div><\/div><p class=\"caption__text\">A grated truffle<\/p><\/div>\n<h2>How to eat it correctly<\/h2>\n<p><strong>In Alba it is traditionally eaten raw<\/strong>: cooking varies its taste and greatly reduces its aromas.<\/p>\n<p>The main rule in cooking with truffles is that<strong> it must be the protagonist<\/strong> of the dish, not one of the many condiments.<\/p>\n<blockquote class=\"small\"><p>Although during the fair the streets of Alba are full of its scent, which to many seems extremely strong, it is in fact a <strong>delicate ingredient<\/strong>, therefore <strong>not combinable with savory dishes<\/strong>.<\/p><\/blockquote>\n<p>Exquisite on warm food and with light sauces; ideal on <a href=\"https:\/\/langhe.net\/recipes\/fondue-with-truffles\/?lang=en\">fondue<\/a>, on &#8220;<a href=\"https:\/\/langhe.net\/recipes\/the-tajarin\/?lang=en\">tajarin<\/a>&#8221; with butter and sage and &#8220;<a href=\"https:\/\/langhe.net\/recipes\/rice-asparagus\/?lang=en\">risotto alla piemontese<\/a>&#8220;;
