Wine-testing is an art, and like every art it requires a specific training. Just as we recognise a melody or a painting, so we must learn to recognise a wine from its color, scent, taste, always remembering that we have already felt these sensations in different situations.<\/p>\n
The “wine-tester memory” is a comparative memory, because it is necessary to comparate continuously all the different sensations (we must learn to describe them: this way they will be useful), remembering virtues or characteristics that define them. The more a certain wine is good, the more its characteristics are recognised and remembered: so it happens for example in the case of Barolo.<\/p>\n
