There is a very important aspect of the whole search system<\/a> of truffles that many ignore, and that gives it a quite desirable added value<\/strong>: for once, the interests of man<\/strong> and their fulfillment are sustainable<\/strong>.<\/p>\n

The truffle has high standards of biodiversity, and thus forces man to safeguard the environment.<\/p><\/blockquote>\n

Usually, in any operation of agriculture or production<\/strong> of daily goods, men leave a negative mark on nature<\/strong> even when they’re trying to limit the damage.<\/p>\n

This magical, capricious hypogeal mushroom changes the game: the ecosystem in which it develops requires very high biodiversity<\/strong> standards; man is forced not only to maintain the environment as it is, but to safeguard it.<\/strong><\/p>\n

Therefore, with the market in constant growth<\/strong>, people start working on an environmental plan to create new reserves<\/strong>, new habitats suitable for its growth. And although the goal is purely economic, the vehicle to reach it is fortunate for the world.<\/p>\n

The habitat of truffles<\/h2>\n

Each species of truffle has specific needs<\/strong> regarding the soil.<\/p>\n

A common factor found in any suitable terrain is the presence of abundant calcium<\/strong>, reason why our lands are so lucky.<\/p>\n

As many know, in fact, this region was originally occupied by the sea<\/strong>, rich in carbonate (limestone).<\/p>\n

Why is ours a land of truffles and quality wines? Thanks to the sea, which once covered these hills.<\/p><\/blockquote>\n

The same soils that characterized the seabed at the time, are those that are suited today not only for truffles<\/strong>, but also for viticulture, in which carbonate is a key element, essential to achieve the recognized quality of our productions.<\/p>\n

Very often, in fact, the areas dedicated to truffles coincide with those that give life to great wines<\/strong>.<\/p>\n

But this particular fungus is unpredictable<\/strong>: it can grow wherever the root system of a congenial tree is found, even in a vineyard, where a pole of willow or oak has taken root thanks to the infinite resources of nature<\/strong>.<\/p>\n

The white truffle<\/h3>\n

This variety<\/a> is certainly the most difficult and demanding<\/strong>.<\/p>\n

On the other hand, its price greatly exceeds that of any other, and its fame has conquered the world and attracts visitors from everywhere<\/strong>.<\/p>\n

For its development the soil must be silty, relatively fertile, and with a correct balance between clay and sand<\/strong>. Altitude<\/strong> is also important: it is very rare above 600-700 meters.<\/p>\n

A man does not create a truffle, he can only put together the right conditions for its development.<\/p><\/blockquote>\n

The best habitats are the invading woods<\/strong>, previously cultivated areas left to themselves, but which have not yet reached the level of total filling of the spaces.<\/p>\n

The clues to look for<\/strong> are plants of hazelnuts, poplars, oaks, which however do not appear too “strait-laced”. Man does not create a truffle, he can only put together the right conditions<\/strong> for its development.<\/p>\n

The black truffle<\/h3>\n

Unlike the white truffle, the black one adapts to different areas<\/strong>, provided they are rich in calcium.<\/p>\n

It prefers poor soils, rich in gravel and pebbles<\/strong>, but also in the locations of the white one it grows without difficulty.<\/p>\n

Scorzone<\/a>, or black summer truffle, is equally versatile. However, it does not like the dense and shady wood, and it binds well to isolated trees<\/strong> or along the watercourses<\/strong>.<\/p>\n

The symbiotic plants of the truffle<\/h2>\n

There are several species<\/strong> of plants with which the truffle can enter into symbiosis. Those present in the Piedmontese vegetation<\/strong> are the following:<\/p>\n

  • isolated trees of poplars, oaks and limes<\/li>\n
  • willow (wild and domestic)<\/li>\n
  • gura (or white willow)<\/li>\n
  • wild hazel<\/li>\n
  • elder<\/li>\n
  • sanguin<\/li>\n
  • Roverello<\/li>\n
  • farnia<\/li>\n<\/ul>\n

    Urban truffles<\/h2>\n

    Another thing that few people know<\/strong> about truffles is that, although its development is difficult and delicate, it happens that it grows in the least suspicious place: in the city center<\/strong>.<\/p>\n

    Alba in particular can boast several “urban” truffle fields, which are hidden under the eyes of everyone in the streets of the center<\/strong>.<\/p>\n

    We usually mean public gardens<\/strong>, parks and flowerbeds, but it is possible to find them under walls<\/strong> or sidewalks<\/strong>.<\/p>\n
