The Bra produced in the communes in the province of Cuneo which are classified as &#8220;mountain&#8221; (law n.991; 07\/25\/1952) can be called from &#8220;alpine pasture&#8221;.<\/p>\n<h4>Characteristics<\/h4>\n<p><a href=\"https:\/\/langhe.net\/food\/cheeses\/?lang=en\">Cheese<\/a> of cow&#8217;s milk, if necessary with oat&#8217;s and ovine milk, half-fat, raw, with pressed, hard dough.<\/p>\n<h4>Shape and Dimensions<\/h4>\n<p>Cilindric shape, diameter of plain sides around 30-40 cm; 7-9 cm tall with official mark impressed. It weighs 6 to 8 Kilos. Hard, solid rind, dark beige or ochre yellow.<\/p>\n<h4>Looks of the dough<\/h4>\n<p>The dough&#8217;s color can be straw-colored or dark and opaque ochre, solid, it breaks neatly.<\/p>\n<h2>History<\/h2>\n<p>Bra cheese has gotten its name from the town of Bra, that was in the past the biggest center for seasoning and selling this cheese. It was in Bra that, back then, the cheese was born. According to Delforno, the cheese was born very long ago and the old piedmontese cheese-makers don&#8217;t remember any other kind of cheese produced in this zone.<\/p>\n<p>Anyway, back then the enterprising cheese-makers of Bra gathered all the products of the zone of Cuneo and of the alpine pasturesin the town of Bra, from where they brought the cheese to the ports of Liguria.<\/p>\n<h2>Production technique<\/h2>\n<p>The main ingredient is cow&#8217;s half-fat milk, if necessary with oat&#8217;s and ovine milk, gathered during one or two daily milkings.<\/p>\n<p>The milk is curdled between 27\u00b0 and 32\u00b0 C with liquid rennet. The mixture is then broken in pieces as big as corn grains, gathered in the &#8221; fascere&#8221;, if necessary broken again and finally pressed.<\/p>\n<p>The salting can be dry or pickled.<\/p>\n<p>The minimum seasoning lasts 6 months in places in which the temperature is 12-15\u00b0 C and the cheese is regularly brushed and oiled.<\/p>\n<h2>Taste and smell<\/h2>\n<div class=\"caption__container content__image alignright size-medium\"><div class=\"ratio\"><div class=\"ratio__content\"><a href=\"https:\/\/langhe.net\/wp-content\/uploads\/2011\/02\/braduro4.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-7218\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2011\/02\/braduro4-242x300.jpg\" alt=\"Bra Duro\" width=\"242\" height=\"300\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2011\/02\/braduro4-242x300.jpg 242w, https:\/\/langhe.net\/wp-content\/uploads\/2011\/02\/braduro4-202x250.jpg 202w, https:\/\/langhe.net\/wp-content\/uploads\/2011\/02\/braduro4.jpg 420w\" sizes=\"auto, (max-width: 242px) 100vw, 242px\" \/><\/a><\/div><\/div><p class=\"caption__text\">Bra Duro<\/p><\/div>\n<p>Pleasant and intense forage flavor, together with strong sensations due to the long ripening. The taste is sapid, and produces a pleasant<\/p>\n<p>itch in the mouth. The making of the raw dough and the seasoning make the bitter taste turn pleasantly hazelnut-flavoured. It is solid, on average hard and granular.<\/p>\n<h2>How to eat it<\/h2>\n<p>At the table, grated or cooking (veal carpaccio with chips of Hard Bra).<\/p>\n<h2>Recommended wines<\/h2>\n<p>Barolo, Barbaresco, Roero, Barbera d&#8217;Alba made in little oak casks.<\/p>\n<h2>Denomination<\/h2>\n<p>Official classification: Presidential Decree; 12\/16\/1982.<\/p>\n<p>Denominazione di Origine Protetta: Reg.
