It is owned by the <strong>Merlo family<\/strong> and \u00a0today it is managed with great passion by young <strong>Fabrizio<\/strong>, who says that <strong>his Barolo DOCG<\/strong> is not a \u201cfat\u201d wine, like those made for competitions, rather it\u2019s a pleasant wine to drink.<\/p>\n<p>After 13 years working in the electronics sector, <strong>Fabrizio<\/strong> decided to take the plunge and <strong>pursue his passion: good food and good wine<\/strong>. In fact, aside from the classic wine tasting visit in the winery with, <strong>he decided to offer his guests the opportunity to have lunch directly in the cellar.<\/strong><\/p>\n<h3>Production method<\/h3>\n<p>The <strong>wine making<\/strong> takes place in <strong>stainless steel tanks<\/strong>, using an \u201c<strong>immersed cap<\/strong>\u201d system and the maceration of the marcs lasts 13 to 17 days.\u00a0<strong>The aging lasts 3<\/strong> years of which 2 in large <strong>Slavonian oak casks<\/strong>, 6 months in <strong>steel tanks<\/strong> and then 6 months in <strong>bottles<\/strong> for an adequate evolution before placing it on the market.<\/p>\n<h3><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-11418\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2015\/07\/Barolo-noannata-435x1030.jpg\" alt=\"Barolo-noannata\" width=\"300\" height=\"711\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2015\/07\/Barolo-noannata-435x1030.jpg 435w, https:\/\/langhe.net\/wp-content\/uploads\/2015\/07\/Barolo-noannata-106x250.jpg 106w, https:\/\/langhe.net\/wp-content\/uploads\/2015\/07\/Barolo-noannata-127x300.jpg 127w, https:\/\/langhe.net\/wp-content\/uploads\/2015\/07\/Barolo-noannata-422x999.jpg 422w, https:\/\/langhe.net\/wp-content\/uploads\/2015\/07\/Barolo-noannata.jpg 570w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>Tasting<\/h3>\n<p>This wine\u2019s color is typical Nebbiolo &#8211; <strong>garnet red<\/strong>. Its <strong>aroma<\/strong> reminds us of <strong>red fruits<\/strong> and <strong>extremely fresh jams<\/strong>, because this Barolo is young. In the mouth the <strong>tannins<\/strong> are significantly <strong>noticeable<\/strong> on the palate and its fresh notes are the protagonists, thus suggesting the <strong>aging potential<\/strong> of this wine.<\/p>\n<p><strong>Grapes<\/strong>: 100% Nebbiolo.<\/p>\n<p><strong>Alcohol content<\/strong>: 14%.<\/p>\n<p><strong>Color<\/strong>: intense garnet red.<\/p>\n<p><strong>Bouquet<\/strong>: hints of red fruits and jam.<\/p>\n<p><strong>Taste<\/strong>: tannic and fresh with good acidity.<\/p>\n<p><strong>Pairings<\/strong>: this wine is suitable for accompanying second courses such as medium and well done meat, \u00a0a selection of herb or mildly seasoned <a href=\"https:\/\/langhe.net\/food\/cheeses\/?lang=en\">cheeses<\/a>.<\/p>\n<p>The <a href=\"http:\/\/shop.langhe.net\/en\/product\/barolo-docg-sylla-sebaste\/\" target=\"_blank\" rel=\"noopener\">Barolo Docg by Sylla Sebaste<\/a> can be found on <strong>ShopLanghe<\/strong>, sold directly from the producer.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The Sylla Sybaste\u00a0winery is located in Barolo, in the Vergne hamlet.
