{"id":4338,"date":"2012-12-22T10:14:30","date_gmt":"2012-12-22T09:14:30","guid":{"rendered":"http:\/\/www.langhe.net\/?p=4338"},"modified":"2015-11-20T09:01:34","modified_gmt":"2015-11-20T08:01:34","slug":"doc-langhe-rosso-chicchivello-2009","status":"publish","type":"post","link":"https:\/\/langhe.net\/en\/4338\/doc-langhe-rosso-chicchivello-2009\/","title":{"rendered":"DOC Langhe Rosso Chicchivello 2009"},"content":{"rendered":"<p>The wine Langhe Rosso Chicchiviello 2009, produced by the winery <strong>La Querciola<\/strong> derives from the three most representative grape varieties in Piedmont: Barbera, Dolcetto and Nebbiolo.<\/p>\n<p>The grapes are different from each other: <a title=\"Dolcetto\" href=\"https:\/\/langhe.net\/vines\/dolcetto-en\/?lang=en&amp;lang=en\"><strong>Dolcetto<\/strong><\/a> grapes are used to produce a young wine, the <a title=\"Barbera\" href=\"https:\/\/langhe.net\/vines\/barbera-en\/?lang=en&amp;lang=en\"><strong>Barbera<\/strong><\/a> ones give us a coloured wine with a strong acidity and from <a title=\"Nebbiolo\" href=\"https:\/\/langhe.net\/vines\/nebbiolo-en\/?lang=en&amp;lang=en\"><strong>Nebbiolo<\/strong><\/a> grapes, lacking in anthocyanins but rich in tannins, are produced wines, that can age for long periouds such as Barolo, Barbaresco and <a title=\"DOCG Roero\" href=\"https:\/\/langhe.net\/wines\/docg-roero\/?lang=en&amp;lang=en\"><strong>Roero<\/strong><\/a>, but also the Carema or the Chiavennasca in Valtellina.<\/p>\n<p>The three grape varieties are vinified separately. At the end of the fermentation process, it is decided the different percentage to use: 40% Dolcetto, 40% Barbera and 20% Nebbiolo.<\/p>\n<p>The wine ages than 9 months in stainless steel tanks before being bottled and after 3 months it can be sold.<\/p>\n<p>It is a wine that includes 3 wines, where the grape varieties are perfectly mixed together in order to highlight their main characteristics.<\/p>\n<p>The Langhe Rosso\u00a0Chicchiviello\u00a0is ruby red in colour, it has a flower nose with red fruits as currant and raspberry, and spicy notes that convey the wine an elegant aroma. The flavour is dry with a good balance between acidity, tannin and alcohol and the finish is long-lasting.<\/p>\n<p>It is an all-course wine, that, because of its structrure and alcohol percentage (14%), is excellent to accompany piedmontese antipasti, omelettes, first courses with meat sauces such as \u201c<a title=\"Tajarin\" href=\"https:\/\/langhe.net\/recipes\/the-tajarin\/?lang=en&amp;lang=en\"><strong>tajarin<\/strong><\/a>\u201d, <a title=\"Minestrone of broad beans\" href=\"https:\/\/langhe.net\/recipes\/minestrone-of-broad-beans\/?lang=en&amp;lang=en\"><strong>soups<\/strong><\/a>, but also salami and <a title=\"Bollito misto\" href=\"https:\/\/langhe.net\/recipes\/bollito-misto\/?lang=en&amp;lang=en\"><strong>red meats<\/strong><\/a>.<\/p>\n<p>&nbsp;<\/p>\n<p>Serving temperature: 16-18 \u00b0C<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The wine Langhe Rosso Chicchiviello 2009, produced by the winery La Querciola derives from the three most representative grape varieties in Piedmont: Barbera, Dolcetto and Nebbiolo.
