{"id":4094,"date":"2012-11-04T10:52:34","date_gmt":"2012-11-04T09:52:34","guid":{"rendered":"http:\/\/www.langhe.net\/?p=4094"},"modified":"2015-11-20T09:00:32","modified_gmt":"2015-11-20T08:00:32","slug":"docg-dogliani-cornole-2009-la-querciola","status":"publish","type":"post","link":"https:\/\/langhe.net\/en\/4094\/docg-dogliani-cornole-2009-la-querciola\/","title":{"rendered":"Dogliani DOCG Cornole 2009 &#8211; La Querciola"},"content":{"rendered":"<p>During the last years, the small town of Dogliani has become the symbol of the high-quality Dolcetto, a wine that, because of its more complexed structure, can age longer than other Dolcetto wines.<\/p>\n<p>3 millions bottles are produced each year in <a title=\"Dogliani\" href=\"https:\/\/langhe.net\/town\/dogliani-piedmont\/?lang=en&amp;lang=en\">Doglian<\/a>i and in other 9 neighbouring towns and from vintage 2011, all the Dolcetto from Dogliani became part of the \u00e9lite of the DOCG wines, reaching the top of the \u201cpyramid of quality\u201d in Italy.<\/p>\n<p>In this very new and unique appellation, we won\u2019t find the word <a title=\"Dolcetto\" href=\"https:\/\/langhe.net\/vines\/dolcetto-en\/?lang=en&amp;lang=en\">Dolcetto <\/a>anymore, but only Dogliani, in order to strengthen the connection with the territory. Thanks to their commitment, their hard work and abilities, the wine makers succeded in producing a great wine, that can be considered as the best expression of Dolcetto.<\/p>\n<p>The wine I am tasting today, is the Dogliani DOCG Cornale 2009 of the winery La Querciola produced using only Dolcetto grapes, which are grown on calcareous soils, with an optimal Sud-West exposure.<\/p>\n<p>Fermentation is done in stainless steel tanks without using industrial yeasts, but only authochtonous ones (produced from the grapes) and lasts two weeks.<\/p>\n<p>After the alcoholic fermentation, the wine ages 18 months in steel tanks and 6 in the bottle.<\/p>\n<p>This wine is ruby red in colour with clear notes of red fruits \u2013 cherry and currant above all \u2013 the taste is dry, with a considerable but soft tannin, and the end is slightly bitter, typical of a well aged Dolcetto.<\/p>\n<p>It is a very drinkable wine, that is perfect with dishes of the Piedmontese cusine: salami, meat \u201call\u2019albese\u201d, roasted peppers with \u201cbagna cauda\u201d, but also stuffed pasta such as ravioli or tajarin with meat sauce.<\/p>\n<p>Because of its 14,50 % alcohol and its good structure, it goes also well with second meat dishes like the Piedmontese <a title=\"Mixed fries\" href=\"https:\/\/langhe.net\/recipes\/mixed-fries\/?lang=en&amp;lang=en\">fritto misto<\/a> (fried mixed foods).<\/p>\n<p>Serve it at the temperature of 16 degrees.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>During the last years, the small town of Dogliani has become the symbol of the high-quality Dolcetto, a wine that, because of its more complexed structure, can age longer than other Dolcetto wines. 3 millions bottles are produced each year in Dogliani and in other 9 neighbouring towns and from vintage 2011, all the Dolcetto [&hellip;]<\/p>\n","protected":false},"author":101,"featured_media":4095,"comment_status":"open","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"_acf_changed":false,"_monsterinsights_skip_tracking":false,"_monsterinsights_sitenote_active":false,"_monsterinsights_sitenote_note":"","_monsterinsights_sitenote_category":0,"footnotes":""},"categories":[1567],"tags":[],"lgarea":[],"class_list":["post-4094","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-eat-drink"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.2 -
