{"id":3535,"date":"2012-09-04T21:11:00","date_gmt":"2012-09-04T19:11:00","guid":{"rendered":"http:\/\/www.langhe.net\/?p=3535"},"modified":"2015-11-20T09:01:23","modified_gmt":"2015-11-20T08:01:23","slug":"doc-langhe-rosato-corallo-la-querciola-2011","status":"publish","type":"post","link":"https:\/\/langhe.net\/en\/3535\/doc-langhe-rosato-corallo-la-querciola-2011\/","title":{"rendered":"DOC Langhe Rosato 2011 Corallo La Querciola"},"content":{"rendered":"<p>\u201cLanghe\u201d is a young designation, it was established in 1994 aiming at increasing the value of the territory, which is made of calcareous and clayey soils sometimes uniquely mixed together.<\/p>\n<p>In this D.O.C. we find two main kinds of wines: in the first it is mentioned the grape variety which is used, for example Langhe <a title=\"Dolcetto\" href=\"https:\/\/langhe.net\/vines\/dolcetto-en\/?lang=en&amp;lang=en\" target=\"_blank\"><strong>Dolcetto<\/strong><\/a>, Langhe<a title=\"Nebbiolo\" href=\"https:\/\/langhe.net\/vines\/nebbiolo-en\/?lang=en&amp;lang=en\"><strong> Nebbiolo<\/strong><\/a>and Langhe <a title=\"Arneis\" href=\"https:\/\/langhe.net\/vines\/arneis-en\/?lang=en&amp;lang=en\" target=\"_blank\"><strong>Arneis<\/strong><\/a> (at least 85%).<\/p>\n<div class=\"caption__container content__image alignright size-full\"><div class=\"ratio\"><div class=\"ratio__content\"><a href=\"https:\/\/langhe.net\/?attachment_id=3537\" rel=\"attachment wp-att-3537\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-3537\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2012\/09\/Langhe-Rosato-DOC-2011-Corallo.jpg\" alt=\"DOC Langhe Rosato 2011 Corallo\" width=\"150\" height=\"150\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2012\/09\/Langhe-Rosato-DOC-2011-Corallo.jpg 150w, https:\/\/langhe.net\/wp-content\/uploads\/2012\/09\/Langhe-Rosato-DOC-2011-Corallo-36x36.jpg 36w, https:\/\/langhe.net\/wp-content\/uploads\/2012\/09\/Langhe-Rosato-DOC-2011-Corallo-120x120.jpg 120w\" sizes=\"auto, (max-width: 150px) 100vw, 150px\" \/><\/a><\/div><\/div><p class=\"caption__text\">DOC Langhe Rosato 2011 Corallo<\/p><\/div>\n<p>In the second only the colour is mentioned: we can find a Langhe Bianco, Rosso and Ros\u00e9, where all the allowed grape varieties which are cultivated in the area of the Langhe can be used.<\/p>\n<p>That\u2019s why a Langhe Rosso can derive from Dolcetto, Merlot and Cabernet grapes, whereas a Langhe Bianco from Sauvignon, Chardonnay and Favorita grapes.<\/p>\n<p>The Langhe Rosato DOC 2011 Corallo that we are tasting today is produced by the winery <strong>La Querciola<\/strong> in Farigliano and it is made with 50% Dolcetto and 50% Merlot grapes.<\/p>\n<p>The most undergoes a cold maceration for one night, so that the poliphenols in the skin \u2013 specially \u00a0the anthocyanins, which are the main responsible for the red colour in wines \u2013 can convey to the wine the wished colour. The skins are then separated from the most and the fermentation in stainless steel tanks begins. It lasts about a week, then the wine is aged 6 months in stainless steel tanks and another month in the bottle before being sold.<\/p>\n<p>This nice pink salmon coloured wine has an intense bouquet with hints of red fruits as cherry and blueberry and a floral note of rose.<\/p>\n<p>The taste is dry, intense and this velvety Langhe Rosato has a good acidity and a medium body.<\/p>\n<p>It is an all-course wine, perfect as aperitif, but it can also be combined with light appetizers, seafood<strong> <a title=\"Summer salad with taleggio\" href=\"https:\/\/langhe.net\/recipes\/summer-salad-with-taleggio\/?lang=en&amp;lang=en\" target=\"_blank\">salads<\/a><\/strong>, delicate <a title=\"Rice with Barolo\" href=\"https:\/\/langhe.net\/recipes\/rice-with-barolo\/?lang=en&amp;lang=en\" target=\"_blank\"><strong>risottos<\/strong><\/a> and pasta dishes, grilled or roasted fish.<\/p>\n<p>Serve it at 12-14 \u00b0C.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u201cLanghe\u201d is a young designation, it was established in 1994 aiming at increasing the value of the territory, which is made of calcareous and clayey soils sometimes uniquely mixed together.
