{"id":280458,"date":"2025-04-30T16:29:47","date_gmt":"2025-04-30T14:29:47","guid":{"rendered":"https:\/\/langhe.net\/280458\/importance-soil-microclimate-altitude-wine-quality\/"},"modified":"2025-04-30T16:47:22","modified_gmt":"2025-04-30T14:47:22","slug":"importance-soil-microclimate-altitude-wine-quality","status":"publish","type":"post","link":"https:\/\/langhe.net\/en\/280458\/importance-soil-microclimate-altitude-wine-quality\/","title":{"rendered":"The importance of soil, microclimate and altitude"},"content":{"rendered":"\n<p>A famous phrase by the late <strong>Luigi Veronelli<\/strong> often returns to the fore: <\/p>\n\n<blockquote class=\"quote quote--is-small accent\">\n<p>Wine is climate, soil, labor and image.<\/p>\n<cite class=\"quote__author uppercase--md\">Luigi Veronelli<\/cite><\/blockquote>\n\n<p>Today, all players in the complex supply chain of the industry, recognize <strong>climate<\/strong> and <strong>soil<\/strong> as the <strong>priority factors<\/strong> for the future quality of the final product, exited to the market.<\/p>\n\n<p>Theme well into the past, particularly regarding the importance of <strong>territories with cold climates<\/strong>. Indeed, in the 1930s, attempts were made in Germany to take <strong>riesling cultivation beyond the 51 parallel<\/strong>. But German scientists in the service of National Socialist pride failed.  <\/p>\n\n<p>After nearly a century, the <strong>concepts<\/strong> of soil and climate have <strong>radically changed<\/strong>. <\/p>\n\n<h2 class=\"wp-block-heading\">The soil<\/h2>\n\n<p>I would start by developing the concept of <strong>soil<\/strong> &#8211; <strong>subsoil<\/strong>. That is, <strong>where the root of the vine draws the substances<\/strong> that, through the sap, are carried to the upper part, giving rise, in part, to the <strong>quality of the grape<\/strong> and thus the <a href=\"https:\/\/langhe.net\/en\/magazine-en\/wines-vines\/\">future wine<\/a>. <\/p>\n\n<figure class=\"wp-block-image alignwide size-landscape-lg\"><img loading=\"lazy\" decoding=\"async\" width=\"1400\" height=\"875\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2025\/04\/vino_bianco_uva_ll-1400x875.jpg\" alt=\"\" class=\"wp-image-280454\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2025\/04\/vino_bianco_uva_ll-1400x875.jpg 1400w, https:\/\/langhe.net\/wp-content\/uploads\/2025\/04\/vino_bianco_uva_ll-900x563.jpg 900w, https:\/\/langhe.net\/wp-content\/uploads\/2025\/04\/vino_bianco_uva_ll-550x344.jpg 550w\" sizes=\"auto, (max-width: 1400px) 100vw, 1400px\" \/><\/figure>\n\n<p>Important is the <strong>geological origin of the subsoil<\/strong>, which, limiting us to the province of Cuneo, dates back to the Tertiary-Miocene period. <\/p>\n\n<p>Caused by marine uplift, the <strong>hills of <\/strong><a href=\"https:\/\/langhe.net\/en\/visit\/\">Langhe<\/a><strong> and Monferrato<\/strong> were formed hundreds of millions of years ago and, in a different, more recent era, those of <strong>Roero<\/strong>. All are rich in <strong>clay<\/strong>, <strong>sand<\/strong> and many <strong>trace elements<\/strong>. <\/p>\n\n<p>According to a generic pattern, it is well known that soils rich in <strong>clay<\/strong>, give rise to theoretically more <strong>structured<\/strong> and more <strong>complex<\/strong> <strong>wines<\/strong>, while soils rich in <strong>sand<\/strong>, give rise to more <strong>elegant<\/strong> and <strong>fragrant<\/strong> wines.<\/p>\n\n<blockquote class=\"quote quote--pull-right quote--is-small typography__quote\">\n<p>The indiscriminate use of herbicides, pesticides and fungicides has eliminated the various concepts of environmentally sustainable soil altogether.<\/p>\n<\/blockquote>\n\n<p>Regarding soil, it should be pointed out that it has undergone and continues to <strong>undergo many changes<\/strong> over time, especially in the area of &#8220;arable soil.&#8221;<\/p>\n\n<p>Much of the land has either been cemented over, or has become part of <strong>works related to roadways<\/strong>, bridges or interchanges of various kinds imposed by city master plans. <\/p>\n\n<p>I would add that the indiscriminate use of <strong>herbicides<\/strong>, <strong>pesticides<\/strong> and <strong>fungicides<\/strong> has eliminated the various concepts of environmentally sustainable soil altogether. Even <strong>fertilizers<\/strong> are becoming less and less &#8220;organic&#8221; to make way for those of chemical origin. <\/p>\n\n<h2 class=\"wp-block-heading\">Altitude and microclimate: the example of the Rhine and Moselle vineyards.<\/h2>\n\n<p>In these cold regions the Roman conquerors themselves had imposed the <strong>cultivation of vines<\/strong>.<\/p>\n\n<p>Moreover, &#8220;vitis allobrogica,&#8221; wrote Pliny the Elder in <em>De Historia Naturalis<\/em>, was about the vine of cold regions, in order to highlight the <strong>great ability of this plant to adapt<\/strong> from the warm-temperate climates of Asia Minor-its cradle of origin-to the cold regions of northern Europe.<\/p>\n\n<h3 class=\"wp-block-heading\">The vineyards of the Moselle<\/h3>\n\n<p>In the Moselle, the vineyards stretch for more than 60 km, with meanders full of <strong>steep and craggy banks<\/strong>; the higher the cliff, the <strong>better the vineyard<\/strong>. Generally the exposure is southwest, south-southwest. <\/p>\n\n<blockquote class=\"quote quote--pull-left quote--is-small typography__quote\">\n<p>In the Moselle, the vineyards stretch for more than 60 km, with meanders full of steep and craggy banks; the higher the cliff, the better the vineyard.<\/p>\n<\/blockquote>\n\n<p>The soil, rich in <strong>layered slate<\/strong> on the surface, absorbs heat during the day and gives it to the vines at night, partly mitigating the great cold.<\/p>\n\n<p>The vineyard training system follows the classic <strong>ritocchino<\/strong> method, where vine rows run downhill along the slope, optimizing sunlight exposure and drainage, with narrow rows and an <strong>impressive slope<\/strong> that is often 70 percent and more. Obvious difficulties for work in the vineyard: &#8220;as much as 1,800 hours of annual work per hectare.&#8221;  <\/p>\n\n<p>Unfortunately, the price of grapes is not competitive: in fact, those who make wine are grappling with a <strong>difficult market<\/strong>; in fact, as in other similar wine-growing regions, many hectares of vineyards are lost each year.<\/p>\n\n<h3 class=\"wp-block-heading\">The vineyards of the Rhine<\/h3>\n\n<p>The Rhine valley, on the other hand, is dotted with <strong>less steep<\/strong>, larger <strong>vineyards<\/strong>. The most interesting grape variety is <strong>riesling<\/strong>: &#8220;the prince of grape varieties&#8221; has adapted well to the region&#8217;s <strong>cold microclimate<\/strong>; in fact, it covers about 19,000 hectares, or eighty percent of the <a href=\"https:\/\/shop.langhe.net\/categoria-prodotto\/vini-bianchi\/?filter_denomination=langhe-riesling-doc\">rieslings<\/a> in all of Europe. <\/p>\n\n<p>The vineyards are all backcountry, with a high number of vines per hectare (roughly 10000), with <strong>narrow rows<\/strong> and an impressive slope (even 70 percent).<\/p>\n\n<p>However, <strong>white grape varieties<\/strong> dominate, primarily muller-turgau, or a cross of riesling and silvaner, followed by silvaner, kerner and pinot grigio.<\/p>\n\n<p><strong>Black grape vineyards are scarce<\/strong>, with pinot noir, called Spatburgubder, excelling (about 5 percent of the planted
