{"id":273509,"date":"2024-12-19T15:21:01","date_gmt":"2024-12-19T14:21:01","guid":{"rendered":"https:\/\/langhe.net\/273509\/holiday-menu-2024\/"},"modified":"2024-12-19T15:35:07","modified_gmt":"2024-12-19T14:35:07","slug":"holiday-menu-2024","status":"publish","type":"post","link":"https:\/\/langhe.net\/en\/273509\/holiday-menu-2024\/","title":{"rendered":"The Holiday Menu 2024"},"content":{"rendered":"\n<p>The menu for the Holidays, Christmas and New Year, is more than just a selection of dishes: it is a <strong>journey between tradition and creativity<\/strong>, capable of telling stories and conveying emotions.<\/p>\n\n<p>Each course reflects the <strong>unique atmosphere of the holidays<\/strong>, mixing classic flavors and innovative recipes to celebrate a special time of year.<\/p>\n\n<p>Whether inspired by <strong>family memories<\/strong>, seasonal produce or <strong>international culinary influences<\/strong>, the Christmas menu is an opportunity for chefs to express themselves, combining authenticity, elegance and a hint of magic.<\/p>\n\n<p>We interviewed chef <strong>Guido Giovanni Peradotto<\/strong> of <a href=\"https:\/\/langhe.net\/azienda\/villa-amelia-ristorante-gastronomico\/?_gl=1*1wqmyoq*_up*MQ..*_ga*MTQ2MzAxNTQzMi4xNzM0MzYzMTUz*_ga_GVTKT90S6H*MTczNDM2MzE1My4xLjAuMTczNDM2MzE1My4wLjAuMA..\">Villa d&#8217;Amelia &#8211; DaM\u00e0 Ristorante Gastronomico<\/a> to let him tell us about his idea and what inspired him!<\/p>\n\n<h4 class=\"wp-block-heading\">What are the main sources of inspiration for your Christmas menu this year?<\/h4>\n\n<p>A preponderant element in the creation of my menus is definitely <strong>the memory of childhood.<\/strong><\/p>\n\n<p>A major influence is the <strong>simple and essential cuisine of the past<\/strong>, the &#8220;grandmother&#8217;s&#8221; cuisine, which I always try to incorporate, more or less predominantly, within my dishes.<\/p>\n\n<figure class=\"wp-block-image size-landscape-lg\"><img loading=\"lazy\" decoding=\"async\" width=\"1267\" height=\"875\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2024\/12\/Villa_Amelia_piatto3-1267x875.jpg\" alt=\"\" class=\"wp-image-273359\" style=\"aspect-ratio:3\/2;object-fit:cover\"\/><\/figure>\n\n<p>Another source of inspiration is undoubtedly <strong>sharing<\/strong>: it is a very important element for me, whether it is sharing with my brigade, sharing with people with whom I have worked in the past or a somewhat one-sided sharing made up of constant study, research and testing.<\/p>\n\n<p>My cooking is a <strong>reflection of every lived experience<\/strong>, every journey and every encounter, and I wanted to bring out this detail in this year&#8217;s New Year&#8217;s Eve menu as well.<\/p>\n\n<h4 class=\"wp-block-heading\">Are there any ingredients or dishes that represent Christmas in a special way to you? Why? <\/h4>\n\n<p>The ingredients that most represent the holidays for me are those that go back to the <strong>flavors and feelings of my childhood<\/strong>.<\/p>\n\n<p>Some dishes and ingredients on this menu carry with them a sense of New Year&#8217;s Eve, for example, inherently, we are talking about the <strong>oysters<\/strong>, <strong>shellfish<\/strong>, or <strong>stuffed pasta<\/strong>, but the ones I am most attached to are the elements that make up the dessert (nougat, spices, and mountain pine).<\/p>\n\n<figure class=\"wp-block-image size-landscape-lg\"><img loading=\"lazy\" decoding=\"async\" width=\"1400\" height=\"875\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2019\/11\/tavolata-Natale-1400x875.jpg\" alt=\"\" class=\"wp-image-189861\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2019\/11\/tavolata-Natale-1400x875.jpg 1400w, https:\/\/langhe.net\/wp-content\/uploads\/2019\/11\/tavolata-Natale-900x563.jpg 900w, https:\/\/langhe.net\/wp-content\/uploads\/2019\/11\/tavolata-Natale-550x344.jpg 550w\" sizes=\"auto, (max-width: 1400px) 100vw, 1400px\" \/><\/figure>\n\n<p><strong>Cinnamon and star anise<\/strong> bring to mind the aromas of early Holidays spent with family.<\/p>\n\n<p>The element I cherish most, however, is the <strong>mountain pine balsamic<\/strong>, a cherished reminder of grandfather&#8217;s candy.<\/p>\n\n<h4 class=\"wp-block-heading\">How do you balance tradition and innovation when creating a Christmas menu?<\/h4>\n\n<p>Balancing <strong>tradition<\/strong> and <strong>innovation <\/strong>is a challenge I face enthusiastically every day, both in <strong>creating dishes<\/strong> and in designing menus.<\/p>\n\n<p>For the Holiday menu, I chose to start from tradition, gradually enriching it with <strong>influences and contaminations from other cultures<\/strong> and cuisines. <\/p>\n\n<p><strong>Tradition<\/strong>, for me, is not exclusively related to Piedmontese roots, but is a <strong>universal concept<\/strong>: it can be represented as much by a plate of tajarin as by a Japanese broth.<\/p>\n\n<figure class=\"wp-block-image size-landscape-lg\"><img loading=\"lazy\" decoding=\"async\" width=\"1400\" height=\"875\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2022\/12\/Pranzo-di-Natale_1-1400x875.jpeg\" alt=\"Christmas table\" class=\"wp-image-223676\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2022\/12\/Pranzo-di-Natale_1-1400x875.jpeg 1400w, https:\/\/langhe.net\/wp-content\/uploads\/2022\/12\/Pranzo-di-Natale_1-900x563.jpeg 900w, https:\/\/langhe.net\/wp-content\/uploads\/2022\/12\/Pranzo-di-Natale_1-550x344.jpeg 550w\" sizes=\"auto, (max-width: 1400px) 100vw, 1400px\" \/><\/figure>\n\n<p>In this menu, I decided to build on the typical raw materials of New Year&#8217;s Eve dinner, combining them with <strong>modern techniques<\/strong> and <strong>unexpected combinations<\/strong> to create an experience that combines roots and innovation.<\/p>\n\n<h4 class=\"wp-block-heading\">Does a dish on your Christmas menu have a special story or meaning? Can you tell us about it? <\/h4>\n\n<p>Pigeon, tangerine, <a href=\"https:\/\/langhe.net\/en\/recipes\/brule-wine\/\">mulled wine<\/a>.
