Along with the consecrated host, which depicts its body, wine is a <strong>symbol of Christ&#8217;s blood<\/strong>, and its liturgical importance is emphasized during the celebration of Mass with the sacrament of the Eucharist. And this everyone knows.<\/p>\n\n\n\n<p>So many imagine that the color of the contents of the chalice is red, but this has not been the case since 1565, the date of the <strong>Synod of Milan<\/strong>.<\/p>\n\n\n\n<p>Few people know that the <strong>star wine of religious ceremonies<\/strong> is <a href=\"https:\/\/langhe.net\/en\/vino\/docg-moscato-asti\/\">Moscato<\/a>, a white wine known for its typical aromatic characteristics.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Where Mass Muscat is born<\/h2>\n\n\n\n<p>We are located in <a href=\"https:\/\/langhe.net\/en\/paese\/santo-stefano-belbo-piedmont\/\">Santo Stefano Belbo<\/a>, an area known for being the birthplace of the famous writer <a href=\"https:\/\/langhe.net\/en\/sight\/route-cesare-pavese-santo-stefano-belbo\/\">Cesare Pavese<\/a> and for its beautiful <strong>wine-growing landscapes<\/strong> born as early as medieval times thanks to the foresight and dedication to the art of winemaking of Benedictine monks.<\/p>\n\n\n\n<blockquote class=\"quote quote--pull-right quote--is-small typography__quote\">\n<p>Bibite frates ne diabolus vos otiosos inveniat<\/p>\n<cite class=\"quote__author uppercase--md\">(Drink, brothers, lest the devil catch you idle)<\/cite><span class=\"quote__book serif--sm\">Benedictine saying<\/span><\/blockquote>\n\n\n\n<p>It is in this &#8220;sacred&#8221; land of the Belbo Valley that stood the <strong>Monastery of the Congregation of the Daughters of St. Joseph of Rivalba (Monastero della Congregazione delle Figlie di San Giuseppe di Rivalba)<\/strong> -the Monastery of the Sisters of White Wine- which for over 100 years (since 1906) has carried on an extremely important wine-making tradition: that of Moscato as mass wine. <\/p>\n\n\n\n<p>In this article, we explore its <strong>little-known history<\/strong> and do so with an exceptional guide, <strong>Maurizio Marino <\/strong>of <a href=\"https:\/\/langhe.net\/en\/azienda\/beppe-marino\/\">Beppe Marino Winery<\/a>, the current producer of this cult drink. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The Congregation of the Daughters of St. Joseph<\/h2>\n\n\n\n<p>The <a href=\"https:\/\/www.figliedisangiuseppedirivalba.org\/fsg\/blog\/le-figlie-di-san-giuseppe-di-rivalba\/2016\/06\/11\/le-figlie-di-san-giuseppe-di-rivalba\/\" target=\"_blank\" rel=\"noreferrer noopener\">Congregation of the Daughters of St. Joseph<\/a>, was founded by <strong>Blessed Clemente Marchisio<\/strong>, a priest from the small town of Rivalba, in the province of Turin, who was a close friend of Giovanni Bosco, Domenico Savio, and Giuseppe Benedetto Cottolengo. <\/p>\n\n\n\n<p>Clemente Marchisio, during his lifetime, had done much in the support of needy girls, indoctrinating them in the monastic way and focusing their activities on all the steps of the <strong>Eucharistic Celebration<\/strong>: production of hosts, wine, creation of vestments, candles, etc&#8230; <\/p>\n\n\n\n<p>Hence the opening of real <strong>houses specializing<\/strong> in each step located throughout Italy: in Niguarda for wafers, in Rome dedicated to cleaning in the Vatican, and in Santo Stefano Belbo for wine production.<\/p>\n\n\n\n<figure class=\"wp-block-image alignwide size-landscape-lg\"><img loading=\"lazy\" decoding=\"async\" width=\"1400\" height=\"875\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2023\/02\/Beppe-Marino-foto-storica-filtrazione-1400x875.jpg\" alt=\"The Monastery of the Sisters of White Wine\" class=\"wp-image-225579\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2023\/02\/Beppe-Marino-foto-storica-filtrazione-1400x875.jpg 1400w, https:\/\/langhe.net\/wp-content\/uploads\/2023\/02\/Beppe-Marino-foto-storica-filtrazione-900x563.jpg 900w, https:\/\/langhe.net\/wp-content\/uploads\/2023\/02\/Beppe-Marino-foto-storica-filtrazione-550x344.jpg 550w\" sizes=\"auto, (max-width: 1400px) 100vw, 1400px\" \/><figcaption class=\"wp-element-caption\">The Monastery of the Sisters of White Wine: filtration<\/figcaption><\/figure>\n\n\n\n<p>It all began almost as a joke, but soon it was determined that Moscato was an ideal wine for mass: <strong>light in alcohol<\/strong> content (to be able to hold more masses) and <strong>aromatic<\/strong>, thus pleasant to drink. <\/p>\n\n\n\n<p>The one produced by the nuns 40\/50 years ago-also, it was exceptionally good and differed from the others for one simple reason: only the <strong>best grapes<\/strong> were selected, which were then processed according to a precise criterion, despite the fact that modern production methods were not yet available. <\/p>\n\n\n\n<p>This <strong>modus operandi<\/strong> is still carried on today, after all this time.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Why Moscato? <\/h2>\n\n\n\n<p>This was first and foremost due to a land-related issue: grape production in the Santo Stefano Belbo area was mainly moscato. <\/p>\n\n\n\n<p>Another interesting reason was that white wine had the advantage of <strong>not staining the tablecloths<\/strong>. <\/p>\n\n\n\n<blockquote class=\"quote quote--pull-left quote--is-small typography__quote\">\n<p>Vinum debet esse naturale de geminine vitis et non corruptum<\/p>\n<cite class=\"quote__author uppercase--md\">(WINE MUST BE NATURAL, FROM THE FRUIT OF THE VINE AND NOT CORRUPTED)<\/cite><span class=\"quote__book serif--sm\">Libro IV can 924 art 3, Codice di Diritto Canonico<\/span><\/blockquote>\n\n\n\n<p>In addition, the <strong>Code of Canon Law<\/strong>, which was still in effect, prepared some rules that a wine had to have in order to be considered &#8220;for Mass&#8221;: it had to come from <strong>ripe grapes<\/strong> and <strong>not be soured<\/strong> or corrupted otherwise it became unfit for purpose. And for this the Moscato grape lends itself very well.<\/p>\n\n\n\n<p>Today, with regard to the <strong>process to be followed<\/strong> in order to qualify as such, mass wine must <strong>receive a clearance<\/strong> from the <strong>Bishop&#8217;s Curia<\/strong> following a quality check performed on a sample sent to the laboratory.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Let&#8217;s give the floor to Maurizio Marino<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">What are the main characteristics that a mass wine must have?<\/h4>\n\n\n\n<p><span class=\"uppercase--md\">Maurizio <\/span>\u2014 Compared to the production of a classic Moscato, the one for mass <strong>is less sweet<\/strong>. Ours, for example, is around 125-135 g\/l residual sugar depending on the vintage, while the one for mass is around 100, maximum 105: <strong>in fact, it should not knead<\/strong> or be cloying. <\/p>\n\n\n\n<p>It is also slightly <strong>more alcoholic<\/strong>, making about 6, 7 degrees unlike the 5 of the Moscato that is marketed.<\/p>\n\n\n\n<p>The biggest difference, however, is the <strong>CO2<\/strong> because it is a completely still wine. This I think because 50 years ago, as there was no modern system of producing &#8220;bubbles&#8221;, the risk of bottle explosion was greater. Over the years, it has somewhat lost the religious aura that it had in the past &#8211; I think of the postwar period, there were about <strong>20 nuns<\/strong> here, which grew to about 40 during harvest time. <\/p>\n\n\n\n<figure class=\"wp-block-image alignwide size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"615\" height=\"328\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2023\/02\/Monastero-foto-vecchia.png\" alt=\"The Monastery of the Sisters of White Wine: view of the Monastery\" class=\"wp-image-225615\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2023\/02\/Monastero-foto-vecchia.png 615w, https:\/\/langhe.net\/wp-content\/uploads\/2023\/02\/Monastero-foto-vecchia-450x240.png 450w\" sizes=\"auto, (max-width: 615px) 100vw, 615px\" \/><figcaption class=\"wp-element-caption\">The Monastery of the Sisters of White Wine<\/figcaption><\/figure>\n\n\n\n<p>The winemaking of Moscato as a mass wine was a <strong>work followed exclusively by the nuns<\/strong> in all its steps. <\/p>\n\n\n\n<p>In the 1990s, <strong>post-methanol scandal<\/strong>, all <strong>production<\/strong> was <strong>revolutionized<\/strong>: in addition to major restructuring, more technological machinery was purchased.<\/p>\n\n\n\n<p>It was a congregation that really was <strong>part of society<\/strong>: when I was a child, the sisters lived the territory, they were active and dynamic. This pleasant memory triggered in me <strong>the intention to continue their work<\/strong>, our company also being very close to the Monastery.<\/p>\n\n\n\n<p>I think it is very important to remember and carry on traditions like this, no matter how much you may or may not be a believer, because they are part of the<strong> history of an area<\/strong> and a community of people who have contributed so significantly, making them live forever.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Where are the bottles distributed?<\/h4>\n\n\n\n<p><span class=\"uppercase--md\">Maurizio <\/span>\u2014 The bottles we produce are <strong>destined all over Italy<\/strong> and partly<strong>abroad<\/strong>, where the sisters continue undaunted to operate in the area, always trying to maintain <strong>very high quality standards<\/strong> and carrying on a message of continuity, despite the fact that there are fewer of them than in the past, unfortunately. <\/p>\n\n\n\n<figure class=\"wp-block-image alignwide size-landscape-lg\"><img loading=\"lazy\" decoding=\"async\" width=\"1400\" height=\"875\" src=\"https:\/\/langhe.net\/wp-content\/uploads\/2024\/03\/vino-da-messa-1400x875.jpg\" alt=\"\" class=\"wp-image-246262\" srcset=\"https:\/\/langhe.net\/wp-content\/uploads\/2024\/03\/vino-da-messa-1400x875.jpg 1400w, https:\/\/langhe.net\/wp-content\/uploads\/2024\/03\/vino-da-messa-900x563.jpg 900w, https:\/\/langhe.net\/wp-content\/uploads\/2024\/03\/vino-da-messa-550x344.jpg 550w\" sizes=\"auto, (max-width: 1400px) 100vw, 1400px\" \/><\/figure>\n\n\n\n<p>For those who have the curiosity to taste <strong>this wine<\/strong>, they will have to give up: as a matter of purely <strong>moral <\/strong>and <strong>respect<\/strong>, since it is intended for the masses, it cannot be tasted.
