Truffles are considered a <strong>condiment<\/strong>, so it is important to choose the wine that best suits the dish on which you will grate the precious hypogean mushroom.<\/p>\n\n\n\n<p>Choose <strong>delicate<\/strong>, young <strong>white<\/strong> or <strong>red<\/strong> wines for appetizers and more structured, full-bodied reds for entrees and main courses.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote\">\n<p>Truffles are considered a condiment, so the wine should be chosen according to the dish on which you will grate the truffle.<\/p>\n<\/blockquote>\n\n\n\n<p>In this case and depending on the proposed dishes, I recommend a <strong>Roero Arneis<\/strong> for the egg in cocotte, a <strong>Dolcetto d&#8217;Alba<\/strong> or <strong>Dogliani<\/strong> for the battuta and tajarin, followed by a <strong>Barolo <\/strong>or <strong>Barbaresco <\/strong>for the meat.<\/p>\n\n\n\n<p>For cake, the issue is more complicated as <strong>wine-chocolate pairing<\/strong> has always been a somewhat controversial topic.
