{"id":239152,"date":"2023-10-17T15:02:35","date_gmt":"2023-10-17T13:02:35","guid":{"rendered":"https:\/\/langhe.net\/239152\/tuber-aestivum-vittadini-uncinato-black-truffle\/"},"modified":"2023-10-17T15:04:10","modified_gmt":"2023-10-17T13:04:10","slug":"tuber-aestivum-vittadini-uncinato-black-truffle","status":"publish","type":"post","link":"https:\/\/langhe.net\/en\/239152\/tuber-aestivum-vittadini-uncinato-black-truffle\/","title":{"rendered":"A journey through the flavor, harvesting and cooking of the Tuber Aestivum Vittadini"},"content":{"rendered":"\n<p><em>Tuber Aestivum Vittadini<\/em> is one of the <strong>most accessible and prized<\/strong> truffle varieties for its <strong>appearance<\/strong>, aroma, and <strong>versatility in cooking<\/strong>, offering a <strong>gateway<\/strong> to the world of truffles for many <strong>culinary enthusiasts<\/strong>. <\/p>\n\n\n\n<p>It is <strong>called by us Piedmontese<\/strong> in two different ways depending on the harvest time: <strong>&#8220;Scorzone<\/strong>&#8221; when harvested in <strong>summer<\/strong> and <strong>&#8220;Uncinato<\/strong>&#8221; when harvested in <strong>autumn<\/strong>. <\/p>\n\n\n\n<p>It is a <strong>widespread species in Europe<\/strong>, in Italy particularly in <strong>Piedmont<\/strong>, Emilia Romagna, Umbria, Abruzzo, Marche and other <strong>Mediterranean countries <\/strong>such as<strong> France<\/strong> and <strong>Spain<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Key Features<\/h2>\n\n\n\n<p>It has a peridium, that is, the <strong>outer part of the truffle<\/strong>, characterized by <strong>coarse protruding warts<\/strong> that are pointed at the ends. The <strong>inner flesh<\/strong>, or gleba, ranges in color from <strong>hazelnut <\/strong>to <strong>dirty yellow<\/strong> in ripe truffles, furrowed with fine <strong>whitish veins<\/strong>.<\/p>\n\n\n\n<p>It gives off a faint smell of <strong>meadow mushroom<\/strong> and <strong>ripens from June to November<\/strong>. Climate, particularly <strong>rainfall in the summer months<\/strong>, greatly influences the <strong>quantity<\/strong> and <strong>quality<\/strong> of the harvest.<\/p>\n\n\n\n<p>Uncinato grows in <strong>a wide variety of soils<\/strong>, preferring <strong>calcareous<\/strong>, <strong>well-drained and aerated<\/strong> soils, both <strong>sandy<\/strong> and <strong>loamy<\/strong>, rich in <strong>calcium<\/strong> and<strong> magnesium<\/strong>. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cleaning and storage <\/h2>\n\n\n\n<p>Given its <strong>rough <\/strong>and <strong>warty<\/strong> appearance, cleaning this type of truffle <strong>can present challenges<\/strong>, but its <strong>low cost<\/strong> allows some flexibility to <strong>expedite the procedure<\/strong>.<\/p>\n\n\n\n<p>It is essential to have a <strong>soft-bristled<\/strong> brush or, alternatively, a <strong>toothbrush<\/strong>, and a <strong>knife<\/strong> with a rounded tip.<\/p>\n\n\n\n<p>You should <strong>gently rub<\/strong> the truffle to remove <strong>soil residue<\/strong>, using the knife to help, avoiding <strong>damaging the
