Those of us from these areas have heard so many stories about truffles<\/strong>.<\/p>\n\n

Midnight walkers, covered with dirt and badly dressed, wandering in darkness<\/strong> accompanied by their only faithful companion, the \u2018tabui<\/em>\u2019 (piedmontese word for dog).<\/p>\n\n

A silent search<\/a>, hidden, treasure hunt where luck is convenient<\/strong> but what helps the most are the years of experience<\/strong>, the lessons handed down from generation to generation and much, much knowledge of the territory.<\/p>\n\n

And it is precisely those same men, the trifulau<\/em><\/a>, who a few hours later with eyes swollen by insomnia<\/strong> struggle against time to sell the rough diamonds<\/strong> of the earth.<\/p>\n\n

Truffle varieties<\/h2>\n\n

The area of Alba, but more generally the woods of Piedmont, are known for the white truffle<\/a> in particular, renowned and expensive, and also for the precious black<\/strong>, called Norcia truffle.<\/p>\n\n

These are the favorites of most, but there are many other edible varieties<\/strong>, diversified according to seasonality, habitat, and size.<\/p>\n\n

And so here is an entire harvest calendar<\/strong>, with the Uncinato truffle in the fall, the Bianchetto<\/strong> in the winter, and the delicate black summer truffle<\/strong> in the months of May through September.<\/p>\n\n

Scorzone, the black summer truffle<\/h2>\n\n

In this sizzling period<\/strong> in which the night attracts even the most unlikely nighthawks, one can often meet the trifulau<\/strong> parked with their four-wheel Pandas on the roadsides.<\/p>\n\n

And probably many people have asked themselves, what is it that they collect in the middle of summer<\/strong>?<\/p>\n\n

Because despite the fact that it is a variety of truffle that is more than found<\/strong> in our hills, and despite the fact that it is excellent value for money<\/strong> compared to the most prized ones, few people know about the Scorzone<\/strong>, scientifically called Tuber aestivum Vittad. Where Vittad. stands for Carlo Vittadini<\/strong> (Italian botanist and mycologist who distinguished the variety), also called black summer truffle<\/strong> for obvious reasons.<\/p>\n\n

The name, which originated with derogatory meaning<\/strong>, is linked to the blackish-brown peridium (the outer part) covered with pyramidal warts<\/strong> that characterizes it, making it more difficult to clean than other varieties.<\/p>\n\n

However, it is a truffle that is resistant<\/strong> to factors usually crucial for black and white: drought does not challenge it, it withstands all kinds of soil<\/strong> and gives its best after cooking, making it the most suitable for many dishes.<\/p>\n\n

How do you recognize it?<\/h2>\n\n

Except, of course, for the time of year when it can be harvested(June 1 to August 31<\/strong>), which leaves little room for doubt, there are several obvious criteria for distinguishing a Scorzone<\/strong> from any other variety.<\/p>\n\n

The matured surface<\/strong> (peridium) has a dark color<\/strong> tending to black, and is similar to the skin of an alligator, composed of small diamond-shaped protrusions.<\/p>\n\n

The flesh<\/strong> (gleba) varies in color from yellowish to more or less intense hazelnut<\/strong>, with highly branched whitish veins that do not change color<\/strong> when exposed to air.<\/p>\n\n

It vegetates in extremely varied soil types<\/strong>, whether sandy and friable or clayey and compact, and enters into symbiosis with a large number of plant species, but especially with oaks and hornbeams<\/strong>.<\/p>\n\n

Kitchen use<\/h2>\n\n

It has a more delicate flavour<\/strong> than the winter ones.<\/p>\n\n

No one forbids shaving it fresh as a finishing element on dishes, but given its excellent resistance to cooking<\/strong>, it is more suited for sauces.<\/p>\n\n

The volatile compounds that give life to the characteristic scent bond with fats, so it is often also associated with rich foods<\/strong> like meat, cheese and eggs.<\/p>\n\n

Its rich woody aroma<\/strong>, reminiscent of garlic, wild mushrooms and hazelnuts, goes very well with lobster, caviar, foie gras, shallots, citrus and aromatic herbs such as tarragon, basil and rocket (rucula).<\/p>\n\n

It can retain its properties for up to a week<\/strong> if properly stored: dry, wrapped in paper towels or white rice and conserved in the fridge.<\/p>\n\n

Cleaning<\/h2>\n\n

Because of the rough, warty surface, cleaning the black summer truffle is not the easiest<\/strong>, but given the lower value on finances one can take a few extra liberties to speed up the process<\/strong>.<\/p>\n\n

One must first arm oneself with a soft-bristled brush<\/strong> (failing that, a toothbrush) and a knife<\/strong> with a rounded tip.<\/p>\n\n

To remove soil residue<\/strong>, you can also use a trickle of cold water to rub it off more easily, but always gently so as not to ruin the surface<\/strong>.<\/p>\n\n

Buy fresh truffle<\/h2>\n\n

It is extremely difficult<\/strong> to buy fresh truffles on the Internet, given the short shelf life<\/strong> and the ease with which they lose<\/strong> their organoleptic characteristics.<\/p>\n\n
