The first confirmed information dates back to the <strong>1500s<\/strong> and it is said it spread from the<strong> lower Piedmont<\/strong> to the surrounding regions.<\/p>\n<p>Let&#8217;s immediately clarify the mystery of the name: <strong>Dolcetto<\/strong> does not refer to the wine, rather to the <strong>fruit<\/strong>, whose berries are <strong>juicy and sweet<\/strong>. However, on the contrary, the wine is dry.<\/p>\n<h2>The terroir<\/h2>\n<p>The land where it is cultivated is in the <strong>Langhe<\/strong>; a land with <strong>a very high wine-making vocation<\/strong>, formed millions of years ago as a result of the sea level rising.<\/p>\n<p><a href=\"https:\/\/langhe.net\/town\/monforte-alba-piedmont\/?lang=en\">Monforte d&#8217;Alba<\/a> represents an <strong>exclusive terroir<\/strong>, particularly ideal for the production of Barolo. In this land, which is also favorable for viticulture, the Dolcetto too has found its<strong> ideal habitat<\/strong>.<\/p>\n<h2>Processing at the winery<\/h2>\n<p><strong>Claudio Pressenda<\/strong>, owner of the Cascina Gramolere company, cultivates his vines personally. His aim is to produce <strong>excellent quality grapes<\/strong>, because, as is often said in these parts, a great wine is made in the vineyard and not in the cellar.<\/p>\n<p>The method used is<strong> integrated pest control<\/strong>, which allows wine production while fully respecting the environment.<\/p>\n<p>The grapes are harvested on average <strong>in early September<\/strong>. They are hand-picked; step by step amongst the rows, so as to select the<strong> best bunches<\/strong>.<\/p>\n<p>Claudio\u2019s work in the <strong>cellar<\/strong> enhances the<strong> raw material<\/strong> through regular fermentation, short maceration and storage in stainless steel autoclaves.<\/p>\n<h2>Sensory analysis<\/h2>\n<p>Let&#8217;s together look at the <strong>characteristics<\/strong> of this Dolcetto d&#8217;Alba 2016; <strong>a great vintage<\/strong> which produced grapes that are nothing short of perfect.<\/p>\n<h3>Color<\/h3>\n<p>The color is a magnificent and intense <strong>purplish red<\/strong>. This Dolcetto presents <strong>a perfect chromaticity<\/strong>, in both intensity and shade. In the glass it is quite inviting: viscosity, tears and clarity are <strong>practically perfect<\/strong>.<\/p>\n<h3>Aroma<\/h3>\n<p>This is the wine\u2019s most interesting aspect. To the nose, it is characterized by its aromas of <strong>sweet fruit<\/strong>, which derive from the vine and its alcoholic fermentation. The bouquet has hints of <strong>black cherries<\/strong>, <strong>currants<\/strong> and <strong>raspberries<\/strong>.<\/p>\n<p>Over time, these notes will <strong>become more complex<\/strong>, reminiscent of<strong> ripe fruit and spices<\/strong>.<\/p>\n<p>On a technical level, its <strong>scent is frank<\/strong>, of absolute intensity,<strong> great finesse<\/strong> and persistence.<\/p>\n<h3>Flavor<\/h3>\n<p>In the mouth, one immediately feels the warmth of the alcohol: this is a <strong>balanced<\/strong>, <strong>dry<\/strong> and <strong>harmonious<\/strong> wine. The acidity is limited and the tannins are almost imperceptible.<\/p>\n<h2>Serving and pairing<\/h2>\n<p>Since it is a red wine, the ideal <strong>glass<\/strong> to use is an <strong>ISO<\/strong>, a<strong> wide glass<\/strong>. The ideal serving <strong>temperature<\/strong> is <strong>16\u00b0C<\/strong>.<\/p>\n<p>Dolcetto d&#8217;Alba is a versatile wine, ideal for the<strong> entire meal<\/strong> and<strong> easily paired<\/strong>. It goes well with all dishes, <strong>from appetizers to second courses<\/strong>.<\/p>\n<p>In particular, it is ideal with <strong>cold cuts<\/strong> and pasta dishes such as <strong>tajarin<\/strong> (fettuccini), <strong>ravioli<\/strong> and <strong>risottos<\/strong>.
