The vinification of Pinot Noir and/or Chardonnay, with the possible addition of small percentages (maximum 10%) of grapes originated from non-aromatic vines, and the traditional re-fermentation in the bottle gives as a result fizzy wines (spumanti) with the following characteristics: White, Rosé or Red (spumante) “Alta Langa”.
Tiny and persistent.
Moderately deep straw yellow for white spumante, moderately deep red for rosé spumante and moderately deep ruby red for red spumante.
Pure, fruity and complex, with reminiscences of yeast, bread crust and vanilla.
Dry and savoury with a good texture.
Minimum alcohol content: 11.5% Vol.;
Minimum total acidity: 5‰;
Sugar-free extract: 14 gr./l.
