A fine and modern cuisine established on the Via del Sale (Salt Road), combining Piedmont and Ligurian traditions, in an old late 19th century farmhouse; a peaceful oasis nestled in the green hills of Dogliani in the Langhe.
Welcoming you will be the owners: Ettore the chef and Alessia the maître. Thanks to studies at the Chefs Association in Turin and FoodLab with Govanni Naviglia, a course at Villa Crespi with Antonino Cannavacciuolo and an internship at the Boscareto in Serralunga d'Alba, they’ve managed to give a touch of originality and imagination to traditional cuisine.
While preparing the dishes the flavors are literally broken down, only to be reassembled on your palate.
The dining room
The typical characteristics of antique furniture, the Langa stone walls and the wooden vaults are in contrast with the modernity of the dishes served. From the dining room you can see the entire kitchen brigade at work and follow the preparation of the dishes and courses, and perhaps discover the chef’s secrets.
Inspired by local traditions, chef Ettore’s dishes will surprise you for originality and meticulous attention to quality and health. The meat is cooked at low temperatures so as to preserve all its organoleptic properties: the cut remains moist, incredibly tasty and does not undergo any weight loss nor dispersion of liquids. Worth highlighting are the light and tasty spuma (a light non-alcoholic drink); whether hot or cold, made with vegetables, fruits, cheeses, herbs and spices, mounted professionally to garnish all dishes, from appetizers to desserts. To tempt you: the exquisite parmigiana esplosa (parmesan eggplant), egg ravioli with a sprinkling of truffle and juicy tongue cubes, soaked in milk for 24 hours.
Just as the seasons change, so do the dishes we serve. The menu is closely tied to seasonal products and is reinvented every month. The ingredients are only top quality: the CO.AL.VI. meat is guaranteed strictly of Piedmont origin; fruits and vegetables come from the Cascina del Mulino Agricultural Farm, Punto Campagna Amica della Coldiretti. The extensive list of wines produced locally are of the utmost quality and genuineness. Some of the labels on our wine list are: Cantina LeViti, Abbona Marziano, Giacomo Vico, Negro Giuseppe, Cascina Castlet, Andrea Oberto, Germano Ettore and of course we have grappas, liqueurs and tonic liquors.
The Acciuga nel Bosco restaurant is located at Cascina Martina, a beautiful agro-tourism farmstead with a rustic and cozy atmosphere. Available are three comfortable bedrooms and two lovely studio apartments that will allow you to discover the surrounding area.
