Tasting the Sylla Sebaste Barolo DOCG

The Sylla Sybaste winery is located in Barolo, in the Vergne hamlet. It is owned by the Merlo family and  today it is managed with great passion by young Fabrizio, who says that his Barolo DOCG is not a “fat” wine, like those made for competitions, rather it’s a pleasant wine to drink.

After 13 years working in the electronics sector, Fabrizio decided to take the plunge and pursue his passion: good food and good wine. In fact, aside from the classic wine tasting visit in the winery with, he decided to offer his guests the opportunity to have lunch directly in the cellar.

Production method

The wine making takes place in stainless steel tanks, using an “immersed cap” system and the maceration of the marcs lasts 13 to 17 days. The aging lasts 3 years of which 2 in large Slavonian oak casks, 6 months in steel tanks and then 6 months in bottles for an adequate evolution before placing it on the market.

This wine’s color is typical Nebbiolo – garnet red. Its aroma reminds us of red fruits and extremely fresh jams, because this Barolo is young. In the mouth the tannins are significantly noticeable on the palate and its fresh notes are the protagonists, thus suggesting the aging potential of this wine.

Grapes: 100% Nebbiolo.

Alcohol content: 14%.

Color: intense garnet red.

Bouquet: hints of red fruits and jam.

Taste: tannic and fresh with good acidity.

Pairings: this wine is suitable for accompanying second courses such as medium and well done meat,  a selection of herb or mildly seasoned cheeses.
